The noodle soup at Himeji Station is unique and well-known among Japanese railfans. The soup is udon soup made from soy sauce, dried bonito flakes, and kombu-seaweed broth, but the noodles are not soba or udon wheat noodles. They are like ramen Chinese noodles. It is called "Ekisoba".
"Ekisoba" started to serve in 1949. Before that, the noodle soup had already been sold, but the noodles were made from arum root powder and buckwheat flour. Instead of that, the noodles changed to those like ramen.
