Located across from the Boulder Crossroads Mall, this is one of the best Chinese restaurants in town. The ambiance is casual and friendly. Pam Proto moved to Colorado in 1990 and immediately loved the Centennial State. Pam found her new home was everything she hoped for... except for one thing. She missed the pizza she had grown up with in New England -- the kind with thin, charred crust, bubbly cheese, and plenty of good memories. So she decided to bring that pizza to her new hometown. Today, Proto's is a Colorado-wide favorite. Guests will feel right at home when they're treated to a warm welcome from our staff (who are really more like family). The Ginger Pig began as a food truck in Boulder in 2016, then had a stall in Rosetta Hall in 2019 and opened a Denver Restaurant in 2020, where we recently won a Michelin Bib Gourmand award. Now we are back in Boulder, offering our delicious food to take-out and delivery customers from The Hill. Our food is inspired by Chef-Owner Natascha Hess's recent travels in Asia, as well as her time spent in China with her host family in college.
