Roquefort is a flavorful ewe's-milk(雌羊の乳)blue cheese aged in the natural caves of Roquefort-sur-Soulzon; it is one of the most famous of all French cheeses. The cheese has distinctive veins of blue mold(かび)which give it its characteristic odor and flavor, with a notable taste of butyric acid(酪酸). The mold is found in the soil of local caves.
