WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第29回】 「レッド・アイ」は何処の生まれか? ◆映画「カクテル」から広がった誤解「レッド・アイ」=写真下=は、ビールとトマト・ジュース、スパイス類でつくる、とてもシンプルなカクテル。欧米発祥と誤解されることも多いが、実は1970年代に日本国内で誕生したドリンクである。カクテル名(「赤い眼」)は、「二日酔いのような血走った眼」に由来するという説が一般的だが、誕生の経緯はほとんど伝わっていない。日本のカクテルブック等では、「レッド・アイは、トム・クルーズ主演の映画『カクテル』(1988年公開)で登場してブレークし、その後、日本国内に広がった」と紹介されることが少なくない。映画「カクテル」と原作者ヘイウッド・グールド(Heywood Gould)の小説では、トムが演じる主人公フラナガンの友人で、バー・マスターのダグが、フラナガンのためにレッド・アイをつくる有名なシーンがある。だが、このレッド・アイは、現代の標準的なレシピに生卵を加えるという驚くべきカクテルとして描かれていた。 ◆映画公開以前から、日本のバーでは飲まれていたしかし、映画「カクテル」が起源という説は、まったくの事実誤認と言うしかない。グールドの小説が出版(1984年)される以前の1970年代後半~80年代前半、日本国内ではすでに、レッド・アイ(生卵はなし)は街場のバーにお目見えしていた。1982年に、日本で出版されたカクテルブック(福西英三著『カクテル入門』=写真右下)にも紹介されている。ビールとトマト・ジュースのカクテルは、本土返還(1973年)前の沖縄ではポピュラーなドリンクだった。。沖縄では当初、「トマト・ビア(Tomato Beer)」または「レッド・ビア(Red Beer)」という名前で飲まれてたという証言もあるが、これがいつしか「レッド・アイ」という名前に変わり、観光客や米軍関係者らを通じて日本本土に伝わったと考えられている。その後、本土に伝わった段階では、「レッド・アイ」という名でほぼ定着していた。そして首都圏から広がり、その他の国内大都市のバーでも、普通に飲めるようになった。私自身、バーで初めてレッド・アイを飲んだのは、1970年代末だったような記憶がある。困ったことに、そういう事実を知らない一部のバー業界関係者や出版関係者が、映画「カクテル」が話題になったことで、「レッド・アイは米国発祥で、本来は生卵を入れるスタイルだった」などという作り話を広めてしまった。 ◆生き残らなかった映画版「生卵入りレッド・アイ」映画&小説のために考案された「生卵入りのレッド・アイ」は、日本で普通に飲まれていた(生卵なしの)レッド・アイが、何らかのルートで原作者のグールドに伝わり、話題づくりのためにアレンジされたものなのだ。「グールドのオリジナル」であり、今日私たちが味わっているレッド・アイとは基本的に別物だということ(ちなみに、グールドは作家になる前、バーテンダーの職歴もあった)。残念ながら、映画「カクテル」自体は専門家から酷評され、加えて米国では元々、生卵を食べるような習慣がなかったこともあり、映画版レッド・アイはその後、米国内ではほとんど忘れ去られてしまった(代わりに、同じ映画に登場した「オーガズム」や「セッックス・オン・ザ・ビーチ」のというカクテルは、その奇抜な名前が話題になったこともあり、今なお生き残っている)。現在、欧米のバーでは「レッド・アイをください」と言っても、99%通じない。「それって何?」と怪訝な顔をされるだけだろう。70年代以降に出版された欧米のカクテルブックでも、この(生卵なしの)レッド・アイというカクテルを紹介している文献は、調べた限りでは皆無である(写真左=映画「カクテル」の原作となった小説の翻訳文庫本)。ただし、IT時代のグローバルな現代、日本国内のレッド・アイが逆に欧米へ発信されているためなのか、5年ほど前は「Red Eye Cocktail」でグーグル検索しても、ほとんどヒットしなかったのに、現在では「日本発のカクテル」として紹介する欧米の専門サイトもいくつか現れるようになっている。 ◆欧米では「レッド・ビア」の方がまだ通じる?ちなみに、欧米などでは現在、ビールとトマト・ジュース、スパイス類を使ったカクテルは存在しないのかと言えば、そうではなく、様々な「違う名前」で飲まれている。米国では例えば、「レッド・ビア(Red Beer)」「トマト・ビア(Tomato Beer)」「スパイシー・ビア(Spicy Beer)」「レッド・ルースター(Red Rooster)」「ブラッディ・ビア(Bloody Beer)」等々。カナダでは「シーザー(Caesar)」または「カルガリー・レッド・アイ(Calgary Red Eye)」、メキシコでは「ミチェラーダ(Michelada)」または「チェラーダ( Chelada)」と呼ばれることが多いという(調べた限りでは、世界的には「レッド・ビア」が一番多数派のようだ)。それぞれいつ頃発祥したのかについては、レッド・ビアについては1950~60年代、ミチェラーダについては1980年代と紹介するサイトもあったが、その裏付け(根拠資料)は示されていない。いずれにしても、単純なレシピなので、名前は違っても、世界各地でほぼ同時多発的に同じようなカクテルが誕生していても不思議ではない。 レッド・アイは、アルコール度数は低めで、ビタミン類も豊富なことから、一晩のバー巡りの締めとして、あるいは飲み過ぎた翌朝の「迎え酒」として(笑)、ぴったりの一杯だ。私もバー巡りをする時には、最後の一杯によく注文する。すると、翌日は二日酔いもなく、すっきりとした頭で起きられるのだ。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第28回】 もし、クラドックが米国に居続けていたら… ◆プライベートな部分に光を当てた『The DEANS Of DRINK』『サヴォイ・カクテルブック(The Savoy Cocktail Book)』(1930年刊)と言えば、サヴォイ・ホテルのチーフ・バーテンダーだったハリー・クラドックが著した歴史的名著で、約90年経った現在でも、「歴史上、最高のカクテルブック」と評価されるこの本には、1920年代末までに誕生したスタンダード・カクテルやクラドックのオリジナルなど約900ものドリンクが収録されている。英国生まれのクラドックは、1897年、「新大陸アメリカで一旗を挙げよう」と22歳でリバプールから外航客船テュートニック号で旅立った。そして、クリーブランド、シカゴ、ニューヨークとバーテンダー修業を積み、求められると、大都市だけでなくリゾート地のホテルにも赴いた。1908年、33歳の時には、英領バハマ諸島(当時)の中心都市、ナッソーのコロニアル・ホテルに移り、ここで4年間働いた。仕立て屋と織物職人の両親を持つ彼が、なぜ、バーの仕事を選んだのかはよく分からない。おそらく、そう裕福でもなく米国にやって来たクラドックにとっては、まず、日銭を稼げるのは身近な職が飲食の現場だったのだろう。とにもかくにも、彼はホテルで職を求めた。そして毎日変化がある職場に、働く喜びを感じたのだろう。それから約23年間、米国を離れるまで、場所は変わっても飲食の場で働き続けたのだから、真面目な性格で忍耐力も強い人間だったに違いない。私は時々想像する。歴史に「たら・れば」はないが、「もし」を考えるのは面白い。以前、私は、「もし禁酒法が成立しなければ、クラドックはずっと米国にいるつもりだったのだろうか?」と考えたことがあった。そして、素顔の彼はどんな人物だったのか、私生活ではどんな日常を送っていたのか、妻や子どもはいたのか。誰しもが興味を抱くそんな部分について知りたいと思っていた。この連載でも以前に紹介した、2013年に刊行された『The DEANS Of DRINK』(Anistatia Miller & Jared Brown共著 ※ハリー・ジョンソン、ハリー・クラドックというカクテル界の2人の巨人の伝記)=写真上=は、これまで謎だった彼のプライベートな部分について、初めて少し光を当ててくれた。 ◆米国籍も取得し、第一次大戦では米軍に志願1916年9月、42歳のクラドックは米国籍も申請し、認められた(英国籍も持ったままの、いわゆる「二重国籍者」となったが、欧米では珍しいことではなかった)。そして、翌年、第一次世界大戦への参戦を米国が表明した際には、徴兵に自ら志願した。この事実を持ってしても、クラドックはもはや英国に帰るつもりはなく、米国に永住するつもりだったことが分かる。翌1917年6月には、アイルランド出身の未亡人、アニー・フィッツジェラルドと結婚する。アニーには死別した前夫との間にルイーズ・エミリーという13歳の娘がいた。結婚当時はアイルランドの姉の家に預けられていたが、3年後、クラッドックらと一緒にマンハッタンで生活し始めた(写真右=ハリーと妻アニー、アニーの娘ルイーズ・エミリー。パスポート用に撮られた写真という。(C)『The Deans of Drink』より)。しかし、家族3人で暮らし始めたのもつかの間、1920年、米国に禁酒法が施行されてしまう。働く場を失ったクラッドック。しかし、違法な社交クラブや“もぐり酒場”で働くことは彼のプライドが許さない。選択肢は「英国へ戻る」ことしかなかっただろう。 ◆マンハッタンの賃貸住宅契約を残したまま帰国この年の4月、クラドックは家族と一緒に帰英する。しかしこの頃、彼はそれでも「いずれ再び米国へ戻る」ことを考えていたことを示す事実がある。ロンドンに住む兄宅に一時身を寄せたが、米国大使館に届け出た住所はニューヨークのまま。マンハッタンの賃貸住宅の契約も5年分を残したまま、解約せず米国を離れている。「禁酒法などそう長く続かない。近い将来廃止となれば、またニューヨークへ戻りたい」と考えていたことは明らかだろう。クラドックは帰国翌年の1921年9月、サヴォイ・ホテルでバーテンダーの職を得た。ニューヨークの賃貸住宅には後に、娘のルイーズ・エミリーが再び帰米し、住むことになった。禁酒法はクラドックの予想に反して13年も続いた。その間に彼はサヴォイのチーフ・バーテンダーに昇格した(1925年)。1927年にはかのマダム・タッソーろう人形館にクラドックの人形が登場するなど、英国でのクラドックの人気と評価は確かなものになっていた。そして、1929年には米ウォール街での株暴落に端を発したあの「大恐慌」が始まり、経済情勢は最悪となる(写真左=アメリカン・バーのチーフ・バーテンダー時代のクラドック)。以前、私は「クラドックは1920年に帰英した後、二度と米国の地は踏まなかった」と書いたことがあった。しかし『The DEANS…』を読むと、実は1930年12月に一度だけ、米国の現状視察と称してニューヨークなどに戻っていたことが分かる。だが、この訪問も、「クラドックのカクテルを求めるサヴォイの顧客の要望に負けて」短期間で切り上げることを余儀なくされた。禁酒法はようやく1933年に廃止され、米国の酒場も復活し始める。クラドックは早速、米国内の複数の一流ホテルからバーテンダー復帰の申し出を受ける。しかし、「大恐慌」の後遺症はなお残り、米国経済はまだ苦しんでいた。一方で、クラドックはすでに英国で確固たる地位も名誉も築いていた。なお米国籍を持ち、米国に未練もあったクラドックだが、自分の年齢(58歳)も考えて、熟慮の末に断ったのは当然かもしれない。 ◆米禁酒法施行がなければ、あの名著も生まれなかった歴史に「もし」はないだろうが、もし禁酒法が施行されなければ、クラドックは間違いなく米国に永住していただろうし、あの名著『サヴォイ・カクテルブック』=写真下=も生まれなかったこと間違いない。1939年、64歳のクラドックはサヴォイを退職。と同時に、同じロンドンの5つ星ホテル、「ドーチェスター・ホテル」の改装なったバーのチーフ・バーテンダーに招かれ、新たなキャリアをスタートさせた。この頃、余暇には、川でフライ・フィッシングに興じることも楽しんだ(ただし釣り道具だけでなく、必ず酒とカクテルを造る道具も持参したという)。クラドックはその後、1951年には76歳でブラウンズ・ホテルのバーに移り、55年まで働き、80歳で引退した。まさに生涯をバーテンダーという仕事に捧げたような生き様。自分の輝かしい経歴についてほとんどメディアには語らなかったクラドックだが、1960年、85歳の誕生に際して、唯一(?)、記者のインタビューに応じて、1930年代、バッキンガム宮殿に招かれ、(当時の)国王ジョージ5世、6世らにカクテルをつくった思い出などを誇らしげに話している。1963年1月23日、ハリー・クラドックは脳溢血のため、ロンドン郊外の老人ホームで87年の生涯を閉じた。妻アニーとの夫婦関係や結婚後の暮らしぶりついては、なぜか記録や証言がほとんど残っていないためか、『The DEANS…』では一切触れられていない(クラドック自身も、あまり私生活を語る人ではなかった)。アニーとの間に子はなく、連れ子の娘ルイーズ・エミリーは結婚後、アイルランドのコークで暮らし、1993年、89歳で亡くなったという。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第27回】 「知られざる」カクテルを知る愉しみ ◆「日本ではあまり見かけない」カクテルに人気が…この連載の第19回で、私は「日本と世界、人気カクテルはなぜ違う」というテーマで執筆した。記事は、日本のバーでの人気カクテル・ランキングには、この40~50年ほど、ほとんど変化がないのに対して、欧米の人気ランキングは2000年以降、その顔ぶれがかなり変わってきていること、その理由・背景は何かを解説したものだった。その記事の中でも触れたが、海外では2000年以降、なぜか「クラシック・カクテル」に再び光が当てられ、再評価されるようになっている(上の画像は、欧米の専門サイト「Drink International」による、最近4年間<2019~2022年>の欧米のバーでの人気カクテルランキング)。欧米の大都市のカクテルバーでは、古いクラシック・カクテルを発掘し、21世紀のアレンジ(ツイスト)を少し加えて、蘇らせる試みが盛んだ。この傾向は、欧米の人気カクテル・ランキングでも同様で、近年では、日本のバーでは注文されることが少ないネグローニ、オールド・ファッションド、サゼラックなどというクラシック・カクテルが上位に目立つという現象が続いている。とくに興味を惹かれるのは、日本のバーではほとんど提供されない、聞いたこともないようなカクテルがランクインしていることだ。 ◆「斬新さ」「複雑さ」を競い合うことへのアンチテーゼ?なぜ、欧米で「クラシック・カクテル」が再評価されるようになったのか。一つには近年、材料や手法が斬新な「モダン・カクテル」が増えて、味わいが複雑になりすぎたことへの「アンチテーゼ」とも言われている。欧米では現在、100年ほど前に出版された古いカクテルブックの復刻版刊行が盛んだ。古い文献の中から「現代に生かせるヒント」を探そうというバーテンダーが増えているのかもしれない。 先日のこと。私は、ある日本人バーテンダーの方から、「海外のバーでよく注文されるカクテル、あるいは近年注目されているカクテルで、日本のバーの現場でも知っておいた方がいいものは何ですか?」という質問を受けた。そこで、長年カクテル史を研究してきた立場もあり、僭越ながら、「(日本での)知名度は低いけれども、プロとして知っておくべきカクテル」を、独自?の視点で選んでみた(写真右=今や「モダン・クラシック」の代表格となったエスプレッソ・マティーニ)。選考するにあたって重視したのは、最近の欧米でのトレンドである。近年の人気カクテル・ランキング調査だけでなく、WEBのカクテル専門サイト、有名バーでの提供メニュー、近年のカクテルブックでの収録内容等々、可能な限りのデータを丁寧に集めてみた。なかには、「エスプレッソ・マティーニ」のように、1980年代以降に登場して人気が定着し、「モダン・クラシック」としての地位を確立したものも少なくない。 ◆「とくに覚えておいてほしい」12のカクテル選んだ約70個のカクテルは、日本のバーではほとんど注文されることがないものが多く、バーテンダーでも知らない人が多いかもしれない。すべてのレシピをここで紹介することは出来ないが、この中で、近年欧米のバー・シーンに頻繁に登場する「(私が)とくに覚えておいてほしいと思う12のカクテル」を、標準的なレシピとともに、以下に紹介しておきたい。()内は誕生年または年代。1.ブランデー・クラスタ(Brandy Crusta)(1850年代)=ブランデー 30ml、コアントロー 10ml、マラスキーノ10ml、レモンジュース20ml、アンゴスチュラ・ビターズ2dash、シロップ少々(シェイク)、オレンジ&レモン・ツイスト2.ラモス・ジン・フィズ(Ramos Gin Fizz)=写真左。 (1888年)=オールドトム・ジン 60ml、レモンジュース15ml、ライムジュース15ml、シロップ23ml、生クリーム23ml、卵白(シェイク)。タンブラーに注ぎ、ソーダで満たす。3.アペロール・スプリッツ(Aperol Spritz) (1920年代)=アペロール60ml、スパークリング・ワイン60ml、オレンジ・スライス(ビルド)4.コープス・リバイバー#2 (Corpse Reviver #2) (1920年代)=ドライ・ジン、コアントロー、リレ・ブラン、レモンジュース各15ml、シロップ5ml、アブサン2dash(シェイク)5.ブールヴァルディア(Boulevaldier) (1927年)=バーボン・ウイスキー 40ml、カンパリ25ml、スイート・ベルモット25ml(シェイク)6.ヴュ・カレ(Vieux Carre)=写真右。 (1937年)=ブランデー、ライ・ウイスキー、スイート・ベルモット各20ml、ベネディクティン1tsp、アンゴスチュラ・ビターズ3dash、レモン・ピール(ステアまたはシェイク)7. ペイン・キラー(Pain Killer) (1970年代初め)=ダーク・ラム(パッサーズ・ネイビー・ラム) 30ml、パイナップルジュース60ml、オレンジジュース15ml、ココナツミルク(またはココナツ・リキュール)15ml、クラッシュド・アイス、ナツメグ・パウダー(シェイク)8. アマレット・サワー(Amaretto Sour) (1974年)=アマレット45ml、レモンジュース23ml、シロップ1tsp、卵白(シェイク)、レモン・ツイスト、マラスキーノチェリー9. エスプレッソ・マティーニ(Espresso Martini) (1983年)=ウオッカ40ml、エスプレッソ・コーヒー20ml、コーヒー・リキュール10ml、シロップ1tsp(シェイク)、コーヒー豆2~3粒を浮かべる10. ブランブル(Bramble) (1980年代半ば)=ジン40ml、レモンジュース15ml、シロップ10ml、ブラックベリー・リキュール10ml(シェイク)、クラッシュド・アイスを入れたロック・グラスに注ぐ。レモン・スライス11. ペニシリン(Penicillin) (2005年)=ウイスキー 50ml、レモンジュース15ml、ハチミツ10ml、ジンジャー・シロップ1tsp、アイラ・シングルモルト1tsp(シェイク)12. メスカル・ミュール(Mescal Mule) (2008年)=メスカル45ml、ジンジャー・ビア30ml、ライムジュース23ml、パッションフルーツ・ピュレ23ml、アガヴェ・シロップ15ml(シェイク)。キュウリのスライス、砂糖漬けの生姜(写真左=欧米では近年、「モダン・クラシック」をテーマにしたカクテルブックが出版されることが多い。これもその一つRobert Simonson著『Modern Classic Cocktails』=2022年刊)。 ◆日本では無名でも、知っておけば得をする以上のカクテルは、日本でのいわゆる「スタンダード100選」や日本発のカクテルブックに、登場することはほとんどなく、従来の日本のバーなら、店側が知らなくてもそう困ることはなかった。しかし、インバウンドの外国人客が日本にバーにもどんどん姿を見せる昨今、プロのバーテンダーなら、「知っておいて絶対に損はしない」、いや「むしろ得をする」カクテルだと思う。とくに、これから海外のコンペなどに挑戦したい、または海外のバーで働いてみたいというバーテンダーには、この12を含む70のカクテルは、ぜひ知っておいてほしいと強く願う。※私が選んだ全70個のカクテルは、筆者の個人Blog「酒とピアノとエトセトラ」(Bar UK公式HPも兼ねる)内の案内ページで、標準的なレシピや考案者や誕生の経緯・由来などを可能な限り紹介しているので、ぜひご覧頂ければ幸いである。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第26回】 今さらながら、サイドカーは誰が考案したのか… ◆「マッケルホーン=考案者」にこだわる人々 現代のバーで最もよく飲まれる人気カクテルの一つに「サイドカー(Sidecar)」(写真下)がある。20世紀初めに誕生し、カクテル名は第一次世界大戦で開発された、「オートバイの横に取り付けて走る乗り物」に由来する。 これほど有名なカクテルなのに、誕生の時期や考案者については定説がない。一番有名なのは、パリの「ハリーズ・ニューヨーク・バー」(1923年創業)のオーナーだったハリー・マッケルホーン(Harry McElhone)が、1920年代前半に考案した」という根拠不確かな説。 しかし、日本国内では、この説をさも本当であるかのように紹介するカクテルブックが今なお多いという現状は、カクテル史を研究している私としては、非常に不可解で、残念でならない。 サイドカー誕生を巡っては、他にも以下のような様々な説が伝わっている。(1)第一次世界大戦(1914~18)中、パリのとあるレストラン・バー。コニャックを飲んでいた米軍人の元に、「急いで軍の本部へ戻れ」という指令が来た。度数の強いコニャックを短時間で飲み干さなければならないその軍人が、バーテンダーに「ホワイト・キュラソーとレモン・ジュースで割ってくれ」と頼んだのが始まり。(2)パリのリッツ・ホテル(Ritz Hotel)内のバーで誕生した。※リッツ・ホテルのチーフ・バーテンダー、コリン・ピーター・フィールドはその著書「The Cocktails of The Ritz Paris」(2003年刊)の中で、「1923年頃、リッツのバーの責任者だったフランク・メイエ(Frank Meier)が考案したと信じている」と書く(ただし、メイエ自身は、1934年に出版した自著『The Artistry of Mixing Drinks』の「Sidecar」の項では、自分のオリジナルかどうか一切言及していない)。(3)19世紀半ばにニュー・オーリンズで生まれた「ブランデー・クラスタ」(末尾【注1】ご参照)という古典的カクテルが、20世紀初めにシンプルなものに改良され、それがサイドカーの原型となり、その後欧州に伝わった。 ◆信頼できる一次資料こそ最良の「拠り所」 諸説が入り乱れている場合、私は、信頼できる一次資料(カクテルブックなどの文献)の記述を「拠り所」にするしかないと信じている。私が現時点で一番信頼するに足ると考えているのは、「ロンドンの社交クラブ<バックス・クラブ(The Buck’s Club)=1919年創業>の初代バーテンダー、パット・マクギャリー(Malachy “Pat” McGarry)が、それ以前にフランス国内で人気カクテルだったものにアレンジを加え、現代伝わっている標準的なレシピを確立して、英国内で広め、それがさらに米国など国外へも伝わった」という説である(写真左=The Buck's Clubの建物)。 「サイドカー」のレシピが最初に活字になったのは、1919年に英国で出版されたハリー・マッケルホーンのカクテルブック『Harry’s ABC of Mixing Cocktails』の1922年の改訂版である(写真右。レシピは「Brandy 3分の1、Cointreau 3分の1、Lemon Juice 3分の1」)。マッケルホーンは、1918年~22年末までの約4年間、ロンドンの「シロ―ズ・クラブ(The Ciro’s Club)」という社交クラブでバーテンダーとして働いていた。 同著改訂版のサイドカーの項には、「このレシピは、ロンドンのバックス・クラブのバーテンダー、パット・マクギャリーによるもの(Recipe by Pat McGarry)」という添え書きがある。「マクギャリーのオリジナル」とは断定していないが、少なくともマッケルホーン自身は「自分のオリジナルではない」ことを示唆している(末尾【注2】ご参照)。 また、同じ1922年、英国でロバート・ヴァーマイヤー(Robert Vermeire 1891~1976)というバーテンダーが出版したカクテルブック『Cocktails:How To Mix Them』(写真左)にも、サイドカーの項には次のような添え書きがある。 「(1922年時点で)サイドカーはフランス国内で非常に人気のカクテルである。バックス・クラブの著名なバーテンダー、パット・マクギャリーによって初めてロンドンへ紹介(introduce)された」。ヴァーマイヤーも、「マグギャリーのオリジナル」とは断定せず、フランス国内発祥説をにおわせている。 ◆レシピ情報共有も当然できた3人のバーテンダー 著者ヴァーマイヤーは、当時フランス・ニースのカジノのバーで働いていたが、その前にはロンドンの「エンバシー・クラブ(The Embassy Club)」という社交クラブにも勤めていた経験がある。 ほぼ同じ時期に、ロンドンの社交クラブで働いていた経験を持つマッケルホーンとヴァーマイヤー、そしてマクギャリー。3人には当然面識があり、マクギャリーがいた「バックス・クラブ」で人気を集めていたサイドカーのレシピも、他の2人にはすぐに伝わったことだろう(写真右=Pat McGarry ?~1941)。 結論として、同時代の2人の重要な文献で同様な証言がある以上、現在伝わっている「標準的なレシピのサイドカー」の誕生に最も貢献した人物(=考案者?)は、マッケルホーンではなく、パット・マクギャリーであると考えるのが一番自然であろうと私は思う。そして、もしマグギャリーが考案者ではなかったとしたら、それはパリのバーで働く誰かであったのであろうが、その名前は今となっては探し出すことは難しい。 「マッケルホーン=考案者」説は、(同じく有名なカクテル「マルガリータ」の「流れ弾に当たった恋人の名前起源」説のように)もはや、根拠のない「後世の作り話」でしかない。日本の出版社やバー業界も、根拠のない説を信じ込み、一般に広めるのはそろそろやめた方がいいと思う(写真左 =Harry McElhone 1890~1958)。 マッケルホーンは1922年、かつて働いたこともあるパリの「ニューヨーク・バー」が売りに出されたことを知って買収し、翌1923年2月、店の名前を「ハリーズ・ニューヨーク・バー」に変えてリニューアル・オープンした(写真下)。そして自らのバーを通じて、サイドカーを世界的に広めた。「サイドカー普及の最大の貢献者」がマッケルホーンであることに、異論を挟む人はいないだろう。 「サイドカー」は、日本にも1920年代前半に伝わり、日本初の実用的カクテルブックの一つと言われる「コクテール」(前田米吉著、1924年刊)で初めて紹介された。シンプルな材料のコンビネーションが生み出す奥行きのある味わい、アルコールと酸味と甘味の絶妙のバランス。100年後でも、多くの人々に愛されている理由が分かるような気がする。【注1】ブランデー・クラスタは、コニャックとキュラソーを混ぜたあとレモンやビターズを加え、砂糖で縁取りしたグラスで飲むのが本来のスタイル。近年は、「ブランデー・クラスタ」のレシピがよりシンプルに改良されサイドカーに発展したという説も、専門家の間でかなり支持を集めている。【注2】ハリー・マッケルホーンはその著書の改訂版(1922年刊)で「(サイドカーは)パット・マクギャリーによるレシピ」と記したが、その説明文は28年版を最後に消えて、1932年以降に出版された版では「自らが考案した」と説明を変更している。レシピ自体はまったく同じなのになぜ変えたのか、その理由は不明。「サイドカーを有名にしたのは自分であり、ハリーズ・ニューヨーク・バーである」という自負があったのかもしれないが、少々不可解と言うしかない。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第25回】 「ミスター・マンハッタン」とは誰か? ◆あの「マンハッタン」とは何の縁も… 「ミスター・マンハッタン(Mr. Manhattan)」(写真下)とは、1920年代半ば~後半に誕生したクラシック・カクテル。サヴォイホテルのチーフ・バーテンダーだったハリー・クラドック(Harry Craddock 1876~1963)が1930年に出版した、かの有名な『サヴォイ・カクテルブック(The Savoy Cocktail Book)』で初めて活字として紹介されている。有名なカクテル「マンハッタン」と何か関係あるのかと思ってしまうが、実は何の縁もない。 ジンをベースに、オレンジ・ジュース、レモン・ジュース、シュガー・シロップ、生ミントの葉を一緒にシェイクした爽やかな飲物。レシピはシンプル。味わいは、柑橘系ジュースと生ミントのコラボが絶妙で、甘さと酸味のバランスも抜群なカクテルである。 しかし残念ながら、日本での知名度はそう高くなく、バーの現場で注文されることも少ない。ベテランのバーテンダーの方でも、その存在やレシピを知らないという人に時々出会う。 「ミスター・マンハッタン」誕生の経緯や名前の由来については、これまでまったく謎だった。クラドック自身も自著では一切何も触れていない。マンハッタンという名前が付いているので、米国ニューヨークで誕生したカクテルと思う人も多かった。しかし、2013年に出版された『The DEANS Of DRINK』(Anistatia Miller & Jared Brown共著 ※ハリー・ジョンソン、ハリー・クラドックというカクテル界の2人の巨人の伝記)=写真右下=が貴重な手掛かりを示してくれた。 ◆クラドックのオリジナルであることが濃厚に 同著によれば、このカクテルの考案者は間違いなく、クラドック自身であり、彼が働いていたロンドンのサヴォイホテル「アメリカン・バー」の顧客の一人、米国人のコラムニスト、カール・キッチン(Karl Kitchen)のために考案したのだという。 そのことを裏付けるエピソードや、「ミスター・マンハッタン」というカクテル名は、ニューヨークのマンハッタンのバーで長く脚光を浴びてきたクラドックに、キッチンが付けた「あだ名」であったことを、キッチンの米国での新聞連載コラムから発掘し、紹介している。 キッチンは連載コラムでこう綴っている。「昨日、(アメリカン・バーで)ハリーに、私のためのオリジナル・カクテルをつくってほしいと頼んだ。そしてきょう、彼は3種類の『ミスター・マンハッタン』をつくってくれた。米国でも簡単に手に入る材料でつくられているのがとてもいい。新しもの好きな米国の人たちにも、このレシピをぜひ教えてあげたい」。 キッチンのコラムを通じて「ミスター・マンハッタン」が、米国の”もぐり酒場”(米国は禁酒法時代の最中)でどの程度広まったのかは分からない。しかし、ジンさえ手に入れば、後は一般家庭でも入手可能な材料で、簡単につくれるレシピなので(禁酒法時代でも家庭内の飲酒は合法だった)、案外隠れた人気を得ていたのかもしれない。 ちなみに、クラドックがつくった3種類の「ミスター・マンハッタン」には、ジン・ベースのほか、「密造(Hooch)ウイスキー3分の2、スイート・ベルモット3分の1、ラズベリー・シロップまたはグレナディン・シロップ、角砂糖」と「スコッチ・ウイスキー4分の3、グレープ・ジュース4分の1、グレナディン・シロップ4dash」だったが、自著のカクテルブックには、No.1のジン・ベースのものだけを収録した(写真左=サヴォイ・ホテル時代のハリー・クラドッ<Harry Craddock>>)。 ◆欧米でも長年忘れられたような存在 クラドックは英国生まれだが、1897年に22歳で米国へ渡り、1920年に禁酒法が施行されるまでは、ニューヨークなど米国内の大都市でバーテンダーとして働いた。しかし、禁酒法で仕事の場を奪われ、やむなく英国へ戻る。そして翌年、ロンドン・サヴォイホテルのバーで職を得て、25年にはチーフに昇格した。 不思議なことに、1930~50年代の欧米のカクテルブックで「ミスター・マンハッタン」を取り上げている本は3割もない(顧客との個人的関係もあって、クラドックが積極的に普及しようとしなかったのか?)。「ミスター・マンハッタン」はその後、忘れ去られたような存在になり、欧米でも1960年代以降、近年に至るまでカクテルブックに登場することは、数えるほどだった。 日本でも1950年代のカクテルブックで初めて紹介されたが、80年代末までは、生のミントはコストがかかり過ぎることもあって、国内のオーセンティック・バーではなかなか普及しなかった。しかしそんな状況の中、思わぬところから、このカクテルが陽の目を見ることになる。 2003年春から全日空(ANA)の機内誌「翼の王国」で連載されていたオキ・シロー氏のカクテル・ショートストーリーで、この「ミスター・マンハッタン」が取り上げられた(2004年1月号誌上)。そのストーリーと言えばーー。 「マンハッタンのバーのカウンターで、一人寂しく飲む男。ある時、カウンターで隣に座った女性をナンパしようと、ミスター・マンハッタンを1杯、ご馳走する。しかし、その女性はカクテルを飲み干すと、男の誘いを無視して一人店を後にした。男の願いは潰れてしまったかに見えたが…」。物語の最後には、絶妙な“オチ”が用意されている。(※オキ氏のこの連載「ミスター・マンハッタン」=写真右上=は、後に単行本化<写真左>された際に収録された)=末尾【注】ご参照。 ◆生ミントの普及に伴って再び注目が このストーリーとカクテルのレシピが、口コミで日本のバー業界にも広がり、オーセンティック・バーの現場でブレイクした。そしてその後、海外でも、昨今のクラシック・カクテル再評価の流れに乗って、再び注目を集めるようになった。 日本でのブレイクに刺激されたのかどうかは定かではないが、海外のカクテル専門サイトでは、現在、「Cocktail Mr Manhattan」で検索すると、実にたくさんのサイトにヒットする。昨今のトレンドとしては、ただ単純に昔のレシピのままつくるのではなく、現代風にアレンジ(ツイスト)することのも目立つ。例えば(ほぼ同じレシピで)ミントジュレップ風のスタイルで提供するのも人気だとか。 日本でも90年代以降は、生ミントも使いやすい価格となり、このカクテルの良さを再認識するバーテンダーも次々に現れてきた。そして前述の「翼の王国」の記事がきっかけとなり、国内に広く知られるようになった。今では、おそらくプロのバーテンダーなら約8割は知っているカクテルになっているのではないか。 レシピはとてもシンプルなのに、甘味と酸味と清涼さのバランスが最高な「ミスター・マンハッタン」。個人的には、もっともっと多くの方に味わって頂きたいと願っている。【確認できる日本初出資料】「世界コクテール飲物辞典」(佐藤紅霞著、1954年刊)=写真右。 そのレシピは(原文通り記すと)「少量の水を加えて角砂糖1個を潰し、新鮮な薄荷(はっか)の葉芽4枚をその中で潰し、レモン・ジュース1ダッシ、オレンジ・ジュース4ダッシ、ジン1を加えて振蕩し、コクテールグラスに漉し移す」。この「薄荷」が西洋ミントなのか国産の薄荷なのかが気になるところ。【注】オキ・シロー氏のショート・ストーリー「ミスター・マンハッタン」は、2008年に出版された同氏の著書「パリの酒 モンマルトル」(ショート・ストーリー集)=扶桑社刊=の中に収録されている。本は絶版になっているが、アマゾンなどで古本で入手可能。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第24回】 ジム・ミーハンに学ぶクラシック・カクテル ◆今や、全米で一番注目されるバーテンダー ジム・ミーハン(Jim Meehan)という名前を聞いて、ピンと来た貴方は相当なマニアックな「カクテル通」だ。現在確か46歳。ニューヨークの名立たるバーで修業して人気を得て、その後2007年に、禁酒法時代の“もぐり酒場”を彷彿とさせる、自らのバー「PDT」を立ち上げた。「PDT」とは「Please Don‘t Tell(誰にも言わないで)」の略で、まさに「秘密の酒場空間」にふさわしい店名だった。 「PDT」は2011年の世界のベストバー・ランキングで第1位に輝き、同年には、その店名を冠したカクテルブック「The PDT Cocktail Book」(写真右下。以下、「PDT」と略)なる著書も出版。ミーハン氏はその才能と技術の高さで、名実ともに、全米で最も注目されるバーテンダーとなった(写真左=ジム・ミーハン氏 (C) Meehan's Bartender Manual)。 そして2017年には、自らの生き様の集大成とも言える「ミーハンズ・バーテンダー・マニュアル(Meehan’s Bartender Manual)」を世に送った。この本は、単なるカクテルブックではない。バーテンディングや道具の扱いなどの実務からバー開業・経営のノウハウまで、ミーハン氏はその幅広い知識や見識を惜し気もなく披露している。 嬉しいことに、昨年(2022年)12月、この「バーテンダー・マニュアル」の日本語翻訳版(楽工社・刊)が出版された。せっかくなので、前著の「PDT」とともに、この近著の内容を少し紹介してみたい。 ◆「古典」に深い造詣、起源や初出文献にもこだわる 2011年に出版された「PDT」は、ミーハン氏自身が「サヴォイ・カクテルブックの精神にのっとって、カクテルの歴史が変わる瞬間として多くの人の記憶に残したいものを切り取ってまとめた」と書いているように、レシピ中心の本である。305種類のカクテルを独特のイラストで彩りながら紹介している。このうち、105がいわゆるクラシック・カクテルで、59はミーハン氏自身のオリジナルや共作カクテル、残り141がミーハン氏と同時代第三者のオリジナルである。 奇しくも、ミーハン氏がこの「PDT」を著す少し前の2000年代後半から、欧米の大都市のバーでは、クラシック・カクテルを現代に再評価するブームが起こりつつあった。ミーハン氏もおそらくはそのようなブームを意識したことは間違いないだろう。元々、クラシック・カクテルへの興味を人一倍持ち、2000年代初頭から、絶版となっている様々な古い文献(カクテルブック)を探しては、「過去」に学んでいた。 「PDT」の中でミーハン氏は、自らが選んだ「クラシック」について、初出文献や出版年を丁寧に触れている。面白いのは、ビジュー・カクテル、クローバー・クラブ、メアリー・ピックフォード、モンキー・グランド、サウスサイド、ヴュ・カレ等々、日本ではほとんど注目されることのないような、「忘れられたクラシック」を数多く選んでいることだ。私は、ミーハン氏ほど、クラシック・カクテルへの関心を隠さず、なおかつその出典や起源(歴史)にこだわるバーテンダーを知らない。 ◆バーテンダーの仕事全般に焦点を当てた近著 今回日本語版が出版された「ミーハンズ・バーテンダー・マニュアル」(写真左下)は、約500ページに及ぶ大著である。「PDT」から6年の歳月を経て、この本を著した動機について、彼は前書きで、「多層構造であるバーテンダーの仕事そのもの」に焦点を当てたかったと綴る。 収録カクテルの数は99点で、前著に比べてかなり少ないが、うち69はクラシック・カクテルだ(残り30はミーハンのオリジナルまたは共作)。オリジナル以外のカクテルについては、そのすべてで「出典や起源、由来」に触れており、ヒストリアン(歴史研究者)としてのミーハン氏のこだわりが目立つ。 例えば、これまで定説のなかった「コスモポリタン」の起源については、「トビ―・チェッキーニが1988年にニューヨークのジ・オデオンで創作した」というあまり知られていない事実に光を当て、「ピスコ・サワー」については1903年にペルーで作られたパンフレットにその原型が登場することを紹介するなど、その誕生にまつわるストーリーについても、詳しく触れている。 ちなみに、「クラシック」として収録した69のカクテルのうち約7割は「PDT」でも取り上げたもので、ミーハン氏がカクテル史の中で、とくに「大切」で「重要」と考えるものなのだろう。 私が感心するのは、コープス・リバイバー、ハンキー・パンキー、ラスト・ワードなど日本のバーではあまり馴染みのないカクテルと、日本も含め世界中のバーで人気のダイキリ、ジン・トニック、ギムレット、ジャック・ローズ、マイタイ、マルガリータ、モヒートなどのカクテルがバランスよく選ばれていることだ(なかには、アブサン・ドリップ、ジャパニーズ・カクテル、シェリー・コブラーなどというマニアックなものもある)。(写真右=ミーハン氏が2008年に考案したオリジナル「メスカル・ミュール」はすでに、「モダン・クラシック」として定着している。(C) Meehan's Bartender Manualから)。 ◆「クラシック」を未来へ継承するために ミーハン氏は以前、あるインタビューで「21世紀の食材と技術を用いて、古典的レシピや失われたレシピを現代に定義し、未来へ橋渡ししていくのが私の責務だと思う」と語っていた。確かに、同じお酒や材料がない現代で、完全に昔と同じクラシック・カクテルの再現は不可能だ。それ故、自著で「クラシック」のレシピを紹介する際、時には、ミーハン流の「提案」を加えている。 彼は近著の中でこうも言う。「バーの中で伝えられることは概ね口移しと伝聞に過ぎない。レシピもしょせんは藪の中の話だ。だからこそ、バーテンダーや現代のカクテル史家は、これからの世代のために、フーミュラ(公式)や実践技術をもっとオープンにして、商売敵に勝つために秘密にするのではなく、文字にして記録して、みんなで共有できるようにすべきだ」と。 私もまったく同感だ。現代のカクテルも、何十年か経てば、“クラシック(スタンダード)”扱いされるかもしれない。その時のためにも、レシピや誕生にまつわる情報は文字として残しておくべきだ。ミーハン氏もおそらく、それが自らの「使命」だと考えているのだろうと信じる。 2019年にバー「PDT」を離れたミーハン氏は、オレゴン州ポートランドへ転居。現在はバー・コンサルタントやラム・メーカーの顧問として活躍しながら、日本企業がオープンした現地の和風バー&レストラン「TAKIBI」(写真左=「TAKIBI」のHPから)で、バー部門の責任者として、新たな挑戦を続けている。今回の大著はおそらく、彼にとっては「通過点」の一つだろうが、間違いなくカクテル史に残る1冊になるだろう。ミーハン氏のようなバーテンダーが同時代にいることを、私は本当に嬉しく思う。 ************************************【今回に限定した追記】ミーハン氏の今回の著書の日本語翻訳版には、明らかに誤植・誤記と思われる部分が2カ所、さらには翻訳文や用語で「私が気になった部分」もありました。加えて、ミーハン氏と私の見解が相違する部分もありましたので、以下紹介しておきます。 なお、もとより、カクテルの起源や由来というものは、裏付けとなる一次資料=証拠がない限り、信頼性に保証はありません。なので、私は常に、一次資料(または一次資料の復刻版)や当事者の証言に基づいて、これまでカクテルの歴史や起源・由来について発信してきました。 一次資料にこだわり、できる限り事実・真実に迫ろうという姿勢はミーハン氏も同じです。私はこのようなミーハン氏の姿勢を以前から尊敬しており、(どちらの見解が正しいか等々の)論争するつもりは毛頭ありません。今後もミーハン氏とは切磋琢磨しながら、バー業界の発展のために、クラシック・カクテルの歴史研究に一層努めていきたいと思っています(なお、この【追記】部分を掲載することに関しては、出版社である楽工社編集部からも了解を頂いています)。 【誤植・誤記】 ◆P247 ハンキー・パンキー「起源」のところの4行目、「俳優のチャールズ・ホートリー(英国の喜劇俳優、1914ー1988)のために創作した」の部分、ホートリーの生没年が間違っています。サヴォイホテルのヘッド・バーテンダー、エイダ・コールマンが「バーの顧客だったホートリーのために考案した」のは歴史的事実ですが、彼女は1925年にバーを退職しています。「ハンキー・パンキー」が考案された時期は1920年代前半と考えられていますから、このホートリーさんがもし1914年生まれなら、6歳~10歳頃にバーで出入りし酒を飲んでいたことになりますが、そんなことは当然あり得ません。実は、英国には、同姓同名のチャールズ・ホートリー(Charles Hawtrey)という俳優(喜劇役者ではないようです)がいます。こちらのホートリーさんは「1858年生まれ、1923年に没」。コールマンは、常連客だったこちらのホートリーさんのために「ハンキー・パンキー」をつくったのです。ご参考(英語版Wikipedia) → https://en.wikipedia.org/wiki/Charles_Hawtrey_(actor,_born_1858)「ミーハンズ・バーテンダー・マニュアル」英語版の原文には「(英国の喜劇俳優、1914ー1988)」という部分はなく、翻訳版をつくるときに補われたようですが、その際、同姓同名の別人と取り違えてしまったのだとと思います。 ◆P291 パロマ「基礎知識」の中ほど、「ウェブサイトによると、1955年にはスクワートがメキシコに輸入されており、メーカーの1950年代にはアロマのようなカクテルの割材として好まれていました」とありますが、英語版の原文を確認したところ、ここに出てくる「アロマ」は間違いで、正しくは「パロマ」です。重要な固有名詞の間違いなので、出版社の編集部には、上記の「ハンキー・パンキー」での間違いとともに伝えました(重版からは訂正するとのことでした)。 【ミーハン氏と私の見解が相違する部分】 ◆P203 ブラッディ・メアリー考案者がピート・プティオ(Pete Petiot)氏であることは、専門家の間でもほぼ意見は一致していますが、誕生の時期については今なお諸説あります。考案の時期について、ミーハン氏は、プティオ氏がニューヨークのセントレジス・ホテルで働いていた時期の1934年頃と記しています。しかし、プティオ氏が(渡米前に働いていた)パリの「ハリーズ・ニューヨークバー」時代の1920年代初頭に、すでに考案していたという説もあります。実際、ハリーズ・バー側は、現在でも「当時勤務していたプティオ氏が考案し、誕生したのはハリーズ・バーである」と主張しています。ミーハン氏はブラッディ・メアリーのページで、ハリーズ・バー時代のことには一切触れていませんが、この点は少し気になりました。何よりもプティオ氏自身が、「ブラッディ・メアリー」誕生の経緯について触れた雑誌「News Week」での1967年のインタビュー(先般出版された「ハリーズ・バー100周年記念本」にも一部収録)で、「ハリーズ・バー時代の1920年に考案した」と語っています(当時は、ウオッカとトマト・ジュースの割合は1:1だったそうですが)。プティオ氏は、このインタビュー時は66歳。専門家の間でも「40年以上前の話で、おぼろげな記憶に基づく(プティオ氏の)証言は、100%信用できない。1920年代前半には、新鮮なトマトは特定の季節しか手に入らなかったはず。通年のカクテルとしては提供できなかったと思う」という人もいますが、考案者本人の言葉なので、無視はできません。ともあれ、1917年のロシア革命後、供給がストップしていたウオッカも20年代後半には東欧で本格的に生産再開され、米国製の缶入りのトマトジュースが、少なくとも1928年までにはパリでも使えるようになっていたことから考えると、当時、「ブラッディ・メアリー」という名前だったかどうかはともかく、プティオ氏が考案したウオッカとトマトジュースのカクテルの「起源」を、現段階で「1934年」と断定してしまうのは疑問が多いと私は考えています。「ブラッディ・メアリー」というカクテル名について、「バーテンダー・マニュアル」では、1934年にプティオ氏がセントレジス・ホテルで働き始めた頃、顧客からの一言をヒントに思いついたというエピソードが紹介されています。曰く「シカゴから来たお客様が口にした、Bloody Maryというあだ名のウェイトレスのことがプティオ氏の心に刻まれた。しかし、ホテルのオーナーが反対したので、メニューには『レッド・スナッパー』という名で登場することになった」と(原文は以下の通り)。In 1934、Fernand Petiot of New York's King Cole Bar at the St. Regis Hotel served a spiced tomato juice cocktail to guests from Chicago; they told him it reminded them of a waitress nicknamed Bloody Mary, and the name stuck. Hotel owner Vincent Astor disapproved of the name, so it went on the menu as the Red Snapper.ミーハン氏は、「ブラッディ・メアリー」というカクテル名はセントレジス・ホテル時代に誕生したという見解のようです(実際、1934年当時、セントレジス・ホテルのバー・メニューに「ブラッディ・メアリー」を入れようとしたプティオ氏が、オーナーに反対されて「レッド・スナッパー」という名前に変えたというのは事実です。 しかも、当時米国ではウオッカの入手が困難だったため、ベースの酒はジンに変えざるを得ませんでした。戦後、米国へのウオッカの本格輸入が始まって再びベースはウオッカに戻り、1948年までには名前も「ブラッディ・メアリー」へ復活したようですが、セントレジス・ホテルのHPによれば、同ホテルのメニューでは、理由は不明ですが、現在再び「レッド・スナッパー」の名に戻しているようです。この変更を、今は亡きプティオ氏はどう思っているのでしょうか…)。ハリーズ・バー時代からすでに「ブラッディ・メアリー」と呼ばれていたという見解もありますが、私は、ミーハン氏の上記の見解(説)にあえて異論は唱えません(ハリーズ・バー時代に「ブラッディ・メアリー」が登場していたという確実な証拠=一次資料も、現時点では確認されていないからです)。しかし私は、「カクテル・ヒストリア」ではミーハン氏とは違う見解に基づいて執筆しています。その根拠となっているのは、(ミーハン氏の著書にも登場する)デイル・デグロフ氏が自著で紹介している説(【ご参考】この項の末尾の私の連載記事の引用で紹介)やプティオ氏自身の後年の証言です。曰く「それは1920年だった。パリのハリーズ・バーで働いていた頃、ウオッカとトマト・ジュースのカクテルを考案した。割合は1:1でつくって、お客様もとても喜んでくれた。名前は、若いスタッフが『Bloody Mary』というのを提案してきたんだ。彼にはMaryというガールフレンドがいてね…」と。すなわち、プティオ氏自身は、ハリーズ・バー時代にすでに「ブラッディ・メアリー」という名のカクテルはできていたというのです(プティオ証言の信憑性を指摘する専門家もいます。1920~30年代前半のハリーズ・バーのメニューが見つかって、Bloody Maryが載っているかどうか確認できればいいなぁと願っています)。以下、私の連載記事から少し引用しておきます。「また、「ブラディー(血にまみれた、無慈悲な)・メアリー」という恐ろしそうな名前の由来については、16世紀半ば、宗教弾圧で多数のプロテスタント教徒を処刑した英女王メアリー1世に由来するというのが定説となってきた(珍説としては、ベースであるウオッカの創業者「ウラジミール・スミルノフ」の名前が欧米人には発音しにくく、「ウラジミール」が転じて「ブラディー・メアリー」になったという話も → 出典:Wikipedia英語版)。しかし、1999年に出版された「Vintage Cocktails」や、2002年に米国の著名なカクテル研究家デイル・デグロフが著した「The Craft of the Cocktail」などは少し違う説を紹介している。曰く、「当初は『Bucket of Blood』(「バケツ一杯の血」の意)という名だった。しかし、その後常連客だったメアリーという女性の名にちなんで、『ブラディー・メアリー』に変わった。その客は相手の男性にいつも待ちぼうけを食わされ、寂しそうにプティオのつくるトマト・カクテルを飲んでいた。その様子がまるで、長期間幽閉されていた女王メアリーの孤独に相通じるものがあった」という。 えっ? 残酷な女王の「無慈悲」というイメージ由来ではなかったの?そして極めつけが、2012年に出版されたハリーズ・ニューヨーク・バーの「100周年記念本(原題:HARRY’S BAR THE ORIGINAL)」。1967年発行の雑誌「News Week」の記事を引用する形で、プティオ氏の驚くべき証言を紹介している。プティオ氏は1934年に米国へ渡り、シカゴの有名ホテルのバーテンダーとなっていた(67年当時は66歳)。プティオ氏は言う。「(カクテル名は)ハリーズ・バーにいた後輩のスタッフが提案してきたんだ。(禁酒法時代、シカゴにあったナイトクラブ)『Bucket of Blood Club』を思い起こさせるって。そして当時、彼にはメアリーという名前の恋人がいたんだ」。本当なのかと思いたくなる証言。今まで信じていた「メアリー1世」説は何だったのか…。」 ◆P272 ダイキリ「バ―テンダー・マニュアル」では、「印刷物に残された最も古いダイキリのレシピは1914年発行のジャック・シュトラウブ著の『Drinks』に収録されています」と紹介されていますが、1913年に米国で出版された「Sideboard Manual」というカクテルブックに1年早く登場しています。 ◆P369 ジャック・ローズ「印刷物に載ったのは1910年の『Jack's Manual』が最初です」と紹介されていますが、1908年に米国で出版されたWilliam Boothbyのカクテルブック「The World Drinks and How To Mix Them」の巻末追補ページに(2年早く)ジャック・ローズは登場しています。 【翻訳文や用語で気になった部分】 ◆P225 マティーニ「起源」の部分、「フランク・ニューマンは、1904年発行の著書『American Bar』の中で、マルティーニ・ドライ・ベルモットでつくる『ドライ・マティーニ』を取り上げています。これを読んでわたしは、このベルモットのブランドの評判は、その名前にかなり影響を受けていると考えるようになりました(マルティーニとマティーニっは綴りが同じ)」とありますが、この翻訳文が、私にはすんなり頭に入ってきません。原文の英語を確認してみると、以下のようになっていました。Frank Newman lists a "Dry Martini" prepared with Martini dry vermouth in his 1904 French bar guide, American Bar which leads me to believe the reputation of the vermouth brand had something to do with the name's sticking.「ベルモットのブランド(vermouth brand)」とは当然「マルティーニ」のことを指しているのでしょうから、ミーハン氏は、「(マティーニという)このカクテルの名前が定着していく過程で、マルティーニのというベルモット・ブランドの評判(評価)がかなり影響している(関係している)と考えるようになりました」という意味で記したのではないかと理解したのですが…。さて、皆さんはどのように思われるでしょうか? ◆P239 ラモス・ジン・フィズこのカクテルだけでなく他にも何カ所か登場しますが、レシピとところで、Orange Flower Waterに「オレンジ花水」という訳語を当てているのが少し気になりました。日本のバー業界でも、「オレンジ・フラワー・ウォーター」とそのままカタカナでの表記が一般的だと思います。無理に「花水」という訳語をつくる必要はないかと…。 ◆P244 ホワイト・レディほか多数他のカクテルでもたびたび登場しますが、「ファイン・ストレイン(fine strain)」という言葉をそのまま使っているのが少し気になりました。プロのバーテンダーなら、よーく考えれば意味が分かるかもしれませんが…一般の読者には分かりにくいのではないかと思いました(かと言って、私も適切な訳語は思い浮かばず、申し訳ありませんが…)。 (※P114を読めば「目の細かいストレーナーを使って二度漉し」することだと分かりますが…、できれば巻末INDEXの「ふ」の項に、「ファイン・ストレイン………114」と追加して頂ければ、読者に親切かと思いました)。 ◆P291 パロマ「基礎知識」の中ほど、「それ(2005年)以前には、いかなるレシピ・ガイドを見ても、こうした材料の組み合わせ(※テキーラ+ライム・ジュース+スクワート)やカクテル名(※「パロマ」のこと)は出てきませんが、」に続く部分です。「ウェブサイトによると、1955年にはスクワートがメキシコに輸入されており、メーカーの1950年代にはアロマのようなカクテルの割材として好まれていました」とあります(前述したように、ここに出てくる「アロマ」は間違いで、正しくは「パロマ」です)。この日本語の文章の意味がよく分からない(とくに「メーカーの1950年代には」という表現は、意味が?です)ので、その少し前の部分から、英語版の原文を確認してみました。Neither the combination of ingredients nor the name appears in any recipe guides before this, despite Squirt's being imported to Mexico in 1955 and the maker's claim, on their website, that is became popular as a mixer in cocktails like the Paloma in the 1950s.私の解釈ですが、ミーハン氏は、「スクワートは1955年にメキシコに輸入され、1950年代にパロマなどのカクテルのミキサーとして普及したとメーカーが自社のウェブサイトで発表していますが、それ(2005年)以前のレシピガイドには、こうした原材料の組み合わせもカクテル名も見当たりません」という意味で書いているのではないかと推察しています。 ◆P367 サイドカーカクテル本の著者「ロバート・ヴェルメイル」という方の名前(P345の「トロント」にも登場)の日本語表記ですが、日本では「ヴァ―マイヤー」または「ヴェルマイヤー」という表記の方がすでに、ほぼ定着しているので、個人的には少し違和感がありました。 *****************************なお、私が今回「ミーハンズ・バーテンダー・マニュアル」を読んで、いくつかの疑問点を感じたからと言って、この本の価値に傷が付くことはまったくないと思っています。この大著は、それぞれのカクテルの歴史的な部分について、情熱を持ってとても丁寧に調べて、書かれた労作です。実際、現代の世界のバー業界で、ミーハン氏ほどカクテルの起源や歴史を大切に考え、それを実践して、発信しているバーテンダーを他には知りません。はっきり言って、この「バーテンダーズ・マニュアル」は賞賛に値する本だと思います(値段はやや高いですが…(笑))。あれこれ指摘しましたが、だからと言って、ミーハン氏に対する私の個人的な評価はまったく変わりません、と言うか、今回の大著を読んで、彼に対する尊敬の念がさらに増したような気もします。次回彼が来日する際には、ぜひ会えることを心から願っています。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第23回】 なぜマルガリータの「作り話」が生き続けるのか ◆米国では見向きもされない「流れ弾説」 マルガリータは現代においても、変わらぬ人気を誇るスタンダード・カクテル。テキーラ・ベースで、ホワイト・キュラソー、ライム・ジュース(+グラスを塩でスノースタイル)というシンプルなレシピ。 しかし、その誕生の経緯・由来については現在まで、確かな説や裏付け資料が伝わってないにも関わらず、日本ではいまだに、「1949年、ジャン・デュレッサーというバーテンダーが、全米カクテルコンテストで3位になった自分のカクテルに、かつてハンティング中の流れ弾に当たって亡くなった悲運の恋人の名をつけた」という説が、国内のカクテルブックなどで事実のように紹介されている。 なぜかよく分からないが、日本国内で発行されるカクテルブックでは、ほとんどがこの根拠の不確かな「流れ弾説」をさも定説のように紹介している(非常に残念ながら、最も権威と信頼性があるはずの『NBAオフィシャル・カクテルブック』の最新版(2016年、あの「食の専門出版社」の柴田書店が刊行)を始め、Wikipedia日本語版、大手ウイスキー会社のHPでさえも!)。結果として、日本のバーの現場では、ほとんどのバーテンダーがこの根拠のない「流れ弾説」を信じ、拡散し続けている。 この「流れ弾説」は、欧米の専門サイトや文献ではまったく取り上げられていない。2008年に出版された「カクテル ホントのうんちく話」の著者・石垣憲一氏の綿密な調査によれば、(日本人による)後世の作り話である可能性がきわめて強いことが判明している。 ◆「デイジー」という古典的カクテルから発展か 石垣氏によれば、1949年当時、全米カクテルコンクールが開かれたという記録はなく、「流れ弾説」は、その前提自体が疑わしいのである。ジョン・ダーレッサー(綴りは「John Durlesser」なので、私は「ジャン・デュレッサー」でなく、より原音に近いこの表記を選ぶ)は、当時ロサンゼルスでバーテンダーをしていた実在の人物だが、彼とマルガリータの創作を結びつける証拠資料やダーレッサー自身のコメントもまったく伝わっていない(出典:欧米のWeb専門サイト)。 そもそも「流れ弾説」は、欧米ではほとんど知られておらず、この説を紹介しているWEB専門サイトやカクテルブックは、私の知る限りほぼ皆無である。Wikipedia英語版には、「このフィクションは日本人のほとんどに信じられている。バーテンダーを主人公にしたドラマがさらに、そのフィクションを事実のように取り上げている」という批判的な書き込みもあったくらいだ。第二次大戦後に、日本人の誰がこのような、手の込んだ「作り話」を考えつき、拡散させたのか…。本当に罪作りと言うしかない(写真右=マルガリータのレシピを伝える1950~60年代?のポスター)。 マルガリータの起源については、不確かな諸説が入り乱れていて、真実は不明だ。しかし、専門家による最新の研究によれば、おそらく、禁酒法時代(1920~33)以前から存在していた「デイジー(Daisy)」というドリンクが原型だろうということではほぼ一致している。「デイジー」はスピリッツをベースに、柑橘系のジュースやシロップを加えシェイクした後、氷を入れたコブレットで味わう古典的なカクテルだ。 ◆誕生の起源を巡り、諸説入れ乱れるが… テキーラが米国中西部やメキシコ側の国境地域で普及するにつれて、「テキーラ・デイジー」というカクテルに発展し、それが「デイジー」の原意(「ひな菊」)を意味するスペイン語の「マルガリータ」と呼ばれるようになったというのだ(出典:2021年刊の「The Cocktail Work Shop」=Steven Grasse & Adam Erace共著ほか米国の専門サイト)。 ご参考までに紹介すると、欧米では少し調べただけでも以下のような、数多くの諸説が伝わっている(出典:Wikipedia英語版や米国の複数の専門サイト<drinkmagazine、thewinetimes、vinepairほか>)(写真左=近年では、「マルガリータの日」を祝うイベントも米国や日本で開催されている)。(1)元々は1930~40年代にメキシコ・アカプルコで誕生し、その後1948年頃に、アカプルコで別荘を持っていた米テキサス州在住のマーガレット・セイムズ(Margaret Sames)なる女性が、別荘で開いたパーティーなどを通じて米国内に広めたといい、カクテル名は自分の名前をスペイン語風に変えて『マルガリータ』と呼んだ」という。(2)1936年、メキシコ南部、プエルバにあるホテルの支配人、ダニー・ネグレーテ(Danny Negrete)がマルガリータという名の彼のガールフレンドのために考案した。(3)1938~39年頃、メキシコ国境に近いカリフォルニア州ロサリートにあるバーのバーテンダー、カルロス・エラーラ(Carlos Herrara)がマリオーリ・キングという名の女優のために考案した。(4)1940年代、ハリウッド在住のバーテンダー、エンリケ・グティエーレス(Enrique Gutierrez)が顧客の一人であった、女優リタ・ヘイワーズのために考案した。ヘイワーズの本名「マルガリータ・カンシーノ」にちなんでマルガリータと名付けたという。(5)1941年、メキシコ西海岸エンセナーダ在住のバーテンダー、ドン・カルロス・オロスコ(Don Carlos Orozco)がドイツ大使の娘、マルガリータ・ヘンケルのために考案した。(6)テキーラ・メーカーの「ホセ・クエルボ社」が1945年に自社のテキーラの販促キャンペーンのために考案した。(7)1948年、テキサス州ガルベストンに住むバーテンダー、サントス・クルーズがマーガレットのミドルネームをもつ歌手のペギー・リーのために考案した。 ◆「作り話」を拡散させる業界団体や出版社 欧米のカクテルブックで、マルガリータが初めて登場するのは、現時点で確認できた限りでは、1947年に出版された「Trader Vic's Bartender's Guide」(Victor Bergeron著)=写真右。レシピは「テキーラ1oz(オンス)、トリプルセック(オレンジ・キュラソー)0.5oz、ライム・ジュース半個分、シェイクして縁を塩でリムしたグラスに注ぐ」(1oz=ounce=は約30ml)となっていて、現代のレシピとそう大きく変わらない。少なくとも1940年代半ばの米国では、マルガリータはある程度認知されていたことが分かる。 マルガリータは、日本にもおそらくは1950年代後半には伝わっていたのだろうが、日本語の文献に初めて登場したのは1967年(『カクテル小事典』=今井清&福西英三著)で、街場のバーで一般的に知られるようになったのは70年代以降。その後は、トロピカルカクテル・ブームなどの効果もあって、幅広く浸透するようになった。 いずれにしても世界中で、今なお日本のバー業界団体、日本人バーテンダー、出版業界だけが、ほぼ作り話に間違いない「流れ弾説」を信じて拡散するのは、そろそろ止めるべきではないだろうか?(「分からないものは分からない」でいいではないか) 少なくとも業界最大の団体として『NBAカクテルブック』を監修している日本バーテンダー協会と、柴田書店を含む数多くの出版社やメーカーは、その責務を考えるべき時期だろう。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第22回】 エイダからシャノンへーー受け継がれる魂 ◆スタートはフラワー・ショップ、28歳で抜擢エイダ・コールマン(Ada Coleman 1875–1966)=写真左下=と聞いて、すぐに誰かと分かる方はバー業界でも少ないだろう。ロンドンのサヴォイ・ホテルで23年間バーテンダーを務め、女性として初めてチーフ・バーテンダーに就いた人である。1898年、23歳のコールマンは、サヴォイ・グループのあるホテル内のフラワー・ショップでそのキャリアをスタートさせた。その後、1900年頃、同じ系列のクラリッジ・ホテルのバーに移る。そこで酒類やカクテルの知識、バーテンディングの基礎を教わったコールマンは、バーテンダーとしての才能を徐々に開花し始める。実は、コールマンがバーで働き始めた20世紀初頭、ロンドンのホテルバーで働く人間の半分弱は女性だった。とくに商人や工場労働者等の若い子女が目立っていた。彼女たちは「バーテンダー」ではなく、「バーメイド」と呼ばれた。長時間労働にも関わらず、彼女たちにとっては、バーは「他の仕事よりも単調でなく、収入も良い」職業だった。一方で当時、女性の職業として「バーの仕事は肉体的、道徳的によくない」という考えもあって、女性を排除する動きもあったが、コールマンのバーテンダーとしての才能を見込んだサヴォイ・ホテルグループのオーナー、ルパート・オイリーは1903年、いきなりサヴォイ・ホテル「アメリカン・バー」のチーフ・バーテンダーに抜擢した。このときコールマンは28歳。バーの顧客には、マーク・トウェイン、マレーネ・ディートリヒ、チャーリー・チャップリンというセレブもいたが、彼女は誰からも厚い信頼を得て、「コーリー」という愛称で呼ばれた。 ◆現代でも人気を誇る「ハンキー・パンキー」コールマンが生み出したオリジナル・カクテルで一番有名なのは、ハンキー・パンキー(Hanky Panky)だろう。ハンキー・パンキーはジン、ドライ・ベルモット、フェルネット・ブランカというシンプルな材料でつくられるカクテル(詳しいレシピは本文末尾で紹介)。21世紀の現在でも、世界のバーでよく飲まれているカクテルベスト50の常連である(Drink Internationalの調査ほか)(写真右=開業当時のサヴォイ・ホテルを描いた版画)。誕生のきっかけは、サヴォイの顧客でもあった、コメディー俳優チャールズ・ホートリーの注文だった。ある時、ホートリーが「コーリー、私は疲れてるんだ。少しパンチのあるものをつくってくれ」と頼んだ。コールマンが提供した新しいカクテルを口にしたホートリーはこう叫んだという。「これは本当のハンキー・パンキー(当時の英国では「手品」「魔法」との意味の俗語)だ!」。ちなみに、アメリカン・バーには、コールマンの前にルース・バージェスという女性が働いていた。なのでコールマンは2人目の女性だった。しかし、2人はそう仲は良くなかったようだ。当時の関係者の証言によれば、コールマンはある時、バージェスに人気のある飲み物のレシピを聞かれた際、教えることを断った。このため、2人の女性は互いほとんど話すことなく、在職中はずっと別々のシフトで働いたという逸話も伝わっている。 ◆米国からの顧客のクレームが遠因で1925年、サヴォイ・ホテルは突然、コールマンとバージェスのバーからの引退を発表した。引退は本人からの申し出ではなく、顧客からのクレームが遠因である。禁酒法施行に伴い、アルコールに飢えた米国人客が増えたが、女性の社会進出に対して保守的な彼らは「バーは女性が働くにはふさわしくない」とコールマンのカクテルやその存在を敬遠するようになった。そして、そうしたクレームに負けたホテル・オーナーが彼女たちを排除してしまったのだ(写真左=エイダ・コールマンのオリジナル・カクテル「Hanky Panky」)。コールマンの後任に座ったのは、米国から帰国し、すでに1921年からアメリカン・バーで働いていた、かのハリー・クラドックだった。クラドックがコールマンに対して、どのような評価や思いを抱いていたのかを伝える記録は残っていない。しかし、その後出版した『サヴォイ・カクテルブック』でも「ハンキー・パンキー」を収録したことからも、彼女への敬意は忘れていなかったはずだ。バーを去ったコールマンのその後は、詳しくは伝わっていない。サヴォイ・ホテルのフラワー・ショップで再び働いていたという話もあるが、それは作り話だという説もある。晩年は別のホテルのクローク・スタッフとして働いていたが、1966年に91歳で亡くなった。 ◆119年ぶり2人目の女性チーフが誕生2016年、米国のカクテルやお酒の専門サイト「Liquor.com」はコールマンをカクテル史上最も重要な9人のバーテンダーの1人として選んだ。そして、2021年、素晴らしいニュースがサヴォイ・ホテルから届いた。「アメリカン・バー」の第13代目のチーフ・バーテンダーに、シャノン・ティーベイ(Shannon Tebay)=写真右((C)サヴォイホテル公式HPから)=という米国人女性を迎えると発表したのだ。女性がチーフになるのは119年ぶり、米国人がチーフになるのはもちろん初めてという。ニュー・メキシコ州出身のティーベイは、アートを学ぶために滞在していたニューヨークのバーでカクテルと出合い、そのクリエイティブな面白さを知り、バーテンダーの道を歩むことになった。そして、マンハッタンにある有名店でミクソロジストとしての腕を磨いてきた。ティーベイは就任に際してのあるメディアとのインタビューで、「もし誰かにカクテルをつくるなら、誰につくってみたいですか?」と尋ねられ、こう答えた。「エイダ・コールマンです。私はたまたま2人目のチーフ・バーテンダーに選ばれただけ。エイダにカクテルをつくれるならとても名誉なことですし、私たちは話したいことがいっぱいあると思う」。ティーベイにとっても、やはりコールマンは特別な存在だったのだろう。多彩な経歴を持つティーベイが、「アメリカン・バー」にどんな歴史を創っていってくれるのか、楽しみで仕方がない。【ハンキー・パンキー(Hanky Panky)】ドライ・ジン(Dry Gin)30ml、スイート・ベルモット(Sweet Vermouth)30ml、フェルネット・ブランカ(Fernet-Branca)2dash、オレンジ・ピール(Orange Peel)、シェイクしてカクテルグラスに。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第21回】 「日本初」になりそこねたカクテルブック ◆「洋酒調合法」は日本初なのか?ある方から、「こんなカクテルブックの存在を知ったのですが、日本で一番古いものなのでしょうか?」との質問を受けた。本の現物はその方の手元にないが、国会図書館のデータベースでは読めるという。早速HPで検索して拝見してみた。その本の名は「洋酒調合法」という。「欧米料理法全書」という本の附録という形の小冊子だが、一応、本の形は整えている。出版時期は、1907年(明治40年)、編者は高野新太郎とある。これまで日本で一番古い時期のカクテルブックは1924年(大正13年)に出版された「カクテル(混合酒調合法)」(秋山徳蔵著)と「コクテール」(前田米吉著)と言われてきた。もし1907年のこの本が「日本初」ならば、これまでより17年も遡って、日本第一号のカクテルブックになることは間違いないというか、日本のカクテル史を書き換えるような事実である(写真左=「洋酒調合法」の最初のページ)。私は国会図書館のデータベースからダウンロードして、全ページを印刷して読んでみた。約90ページの小冊子には、209種類のカクテルが収録されている。調べてみると、現代でもその名が知られているスタンダード・カクテルが約20種類も(例えば、ジン・リッキー、トム・コリンズ、マティーニ、マンハッタン、ミント・ジュレップ、オールド・ファッションド、ウイスキー・ハイボール、シャンパン・カクテル、エッグノッグ等々)、前述した秋山徳蔵や前田米吉の本よりも早く紹介されていたのだ。すなわち、「日本における初出文献」が17年早くなることになった。 ◆なぜ、単行本でなく「附録」で出版それにしても、私には不思議だった。1907年と言えば、街場のバーはまだ登場していなかったが、外国人居留地のホテルのバーはかなり充実してきた頃のはずで、最新カクテルの本にはそれなりに需要はあったはず。なぜ料理本の附録ではなく、単行本として出版しなかったのか。私は、「洋酒調合法」の中身をさらによく読み込んでみることにした。第一章は、「酒保人(バーテンダーズ)の心得」。そして、第二章に「洋酒の調合法」と題して、「JPCカクテル」に始まり「ウイスキー・ジュレップ」まで209種類のカクテルのレシピが収録されている。さらに、果実ブランデーを造る法、瓶詰めカクテルを造る法、ビターズを造る法、酒を造る法、果実シロップを造る法という項をそれぞれ単独で設けている。附録というには、かなり充実ぶりである(写真右=「洋酒調合法」で日本で初めて活字になったジン・リッキー)。 ◆「ホフマン」という言葉から分かったこと読み込んでいるうちに、ふとカクテル名の頭に「ホフマン(Hoffman)」という言葉がついたものがいくつかあることに気づいた。例えば、「ホフマン・ハイボール」。レシピは「スコッチ・ウイスキー1ジガー、ソーダ、氷(大きいグラスでビルド)」というから、普通のウイスキー・ハイボールであるが、あえて「ホフマン」と言うのは何かあるのか。さらに、「ホフマンハウス・クーラー」(スコッチ<またはライ>・ウイスキー1ジガー、ジンジャーエール適量、オレンジの皮をむいたもの、氷)、「ホフマンハウス・オールドファッションド・カクテル」(ウイスキー1ジガー、オレンジ・スライス、ブッカーズ・ビターズを一振りした角砂糖)、「ホフマンハウス・フィズ」(プリマス・ジン1ジガー、レモンジュース半個分、粉砂糖2分の1tsp、乳脂<クリーム>1tspをシェイクして、ソーダ水を加える)等々。これは何かある。「ホフマン」「ホフマン・ハウス」とは何か? 今はWEBで検索すればそう苦労することもなく何かのヒントが得られるのが有難い。すぐに、「ホフマン・ハウス(Hoffman House)」とは、19世紀半ばから20世紀初頭にニューヨークにあったホテル(1864~1915)の名前であり、「ホフマン・ハウス・バーテンダーズ・ガイド」=写真左下=という本が、「洋酒調合法」出版の2年前の1905年に出版されていることが分かった。 ◆カクテルブックの復刻版出版が多い米国バー文化やカクテルへの認知度、関心度が高い欧米では、古い時代のカクテルブックがかなりの割合で復刻出版されていることが多いが、「ホフマン・ハウス…」も嬉しいことに、2014年に復刻版が出版されていた。早速、米国アマゾンのHPで注文し、届いた本の中身を確認してみた。著者はこの「ホフマン・ハウス」のバーでチーフ・バーテンダーとして働いていた、チャールズ・マハニー(Charles Mahoney)というバーテンダーである。自らの名前を冠したオリジナル、「マハニー・カクテル」も収録しているが、基本は同時代に普及していた、カクテルを含むミクスト・ドリンクを紹介している。マハニーの名は、実は後年出版された歴史上有名なカクテルブック「ABC of Mixing Ccktails」(1919年刊、ハリー・マッケルホーン著)にも登場する。この本のなかの「サイドカー(Sidecar)」の項で、著者マッケルホーンが記した「これはチャールズ・マハニーのレシピである」という但し書き。これは、いろんな出版物で間違って紹介される「サイドカー=マッケルホーン考案説」を否定する、有力な証拠にもなっている。 ◆“ネタ本”に頼った「洋酒調合法」ではあるけれど…調べてみると、さらに驚くべきことが分かった。「洋酒調合法」の内容は、カクテルの登場順など若干の違いはあれ、209のカクテルはすべて「ホフマン・ハウス…」収録の259のカクテルの中から選ばれていた。しかし、前書きなどでこのカクテルブックについての言及は一切なかった。編者の高野新太郎がどういう人物なのかは、現時点ではよく分からない。しかし、料理編の編者もつとめていることからおそらくは料理畑の人間ではなかったか。カクテルの知識はあまりないので、「ホフマン…」の内容をほぼ頂戴したが、恥ずかしさもあって「知らん顔」を決め込んだのであろう。驚くべきことに、この「欧米料理法全書&洋酒調合法」は当時、米国サンフランシスコを拠点にして日米で同時発売されている(おそらく、現地の日系人社会の需要もあったのであろう)。「洋酒調合法」はその“出自”や内容からしても、単行本の附録(小冊子)という形からしても、「日本初のカクテルブック」とはとても言えない。しかし、「ホフマン・ハウス…」の出版からわずか2年後の1907年に、当時の欧米の最新のカクテル事情を紹介した功績は限りなく大きい。この本のおかげで、現代でもその名が知られるスタンダード・カクテルが約20近くも日本で初めて紹介された。この小冊子が世に出なければ、街場にバーが登場(初お目見えは3年後の1910年)するのは、もう10年遅れていたに違いない。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第20回】 マンハッタン、かくも謎めいたカクテル ◆根拠が崩れた有名な逸話 「カクテルの女王」の異名をもつマンハッタン(Manhattan)=写真左下。考案者が誰かは分かっておらず、誕生の由来にも諸説がある。しかしながら、1870年代半ばから1884年までの間にニューヨークの社交クラブ「マンハッタン・クラブ」で考案され、マンハッタン島もしくはそのクラブ名にちなみ「マンハッタン」と名付けられ、世界中へ広まっていったのは間違いないということでは、専門家の意見はほぼ一致している。 諸説の中で一番よく紹介されるのが、「ニューヨークの銀行家令嬢だったジェニー・ジェローム=後の英国首相ウィンストン・チャーチルの母=が、1874年の大統領選の時、マンハッタン・クラブで候補者支援パーティーを開き、そのとき考案された」という説だ。 しかし、この連載の第4回でも触れたが、チャーチル自身が後年の自伝で、「母はその当時フランスにいて、妊娠もしていたので、その支援パーティーの場にはいなかった」と記している(出典:Wikipedia英語版)。ジェローム自身も生前、このカクテルの誕生に自分が関わったという発言を一切残していないことから、後世のつくり話の可能性が高いことはほぼ間違いない。 ◆初出資料は1884年、従来説より3年遡る ところで、欧米のカクテルブックでマンハッタンが初めて活字になったのは、従来は1887年、「カクテルの父」の異名も持つジェリー・トーマス(Jerry Thomas 1830~1885)のカクテルブック「How To Mix Drinks」の改訂版(※トーマス死去の2年後に出版)であると言われてきた。 しかし近年の研究で、1884年に米国で出版された2冊のカクテルブック、「The Modern Bartenders' guide」(バイロン<O. H. Byron>名義=末尾【注1】ご参照)、「How To Mix Drinks:Bar Keepers’ Handbook」(ジョージ・ウインター<George Winter>著)=写真右=が初出資料であることが有力になってきた。 バイロンやウインターの本はその存在は知られていたが、近年まで絶版になっており、研究の対象として人目に触れる機会はほとんどなかった。しかし2000年以降に復刻版が刊行され、米国の著名なバーテンダー&カクテル研究者のデイル・デグロフ氏や、「The Manhattan:The Story of the First Modern Cocktail」(2016年刊)の著者フィリップ・グリーン氏によって、「トーマスの著書よりも3年早く」マンハッタンが紹介されていることが確認された。 バイロンの本(写真左)では、以下の2種類のレシピで収録されている(ウインターの本では1種類で、レシピはバイロンとほぼ同じだが、ベルモットの種類についての言及はない)。 マンハッタンNo.1=ウイスキー2分の1Pony(約30ml。【末尾注2】ご参照)、フレンチ(ドライ)ベルモット1pony、アンゴスチュラ・ビターズ3~4dash、ガムシロップ3dash マンハッタンNo.2=ウイスキー2分の1Wineglass(容量は約60ml)、イタリアン(スイート)ベルモット2分の1Wineglass、アンゴスチュラ・ビターズ2dash、キュラソー2dash ◆当初はドライ・ベルモットを使うレシピが優勢だった? 興味深いのは、バイロン本ではドライ・ベルモットを使うマンハッタンの方が、現代標準レシピのスイート・ベルモットを使うものより先に掲載されていることで、マンハッタン成立の過程がうかがえる貴重なレシピとも言える。米国内で欧州産のドライ・ベルモットが普及し始めたのは、スイート・ベルモットよりも後なので、なぜドライの方が「No.1」の位置づけなのか、これは少し謎である。 その後、米国内で出版されたカクテルブックで「マンハッタン」のレシピがどのように変化していったのかを、少し見ていくとーー。 トーマス本では「ライ・ウイスキー1pony(約30ml)、スイート・ベルモット1Glass(約60ml)、キュラソー(またはマラスキーノ)2dash、ビターズ3dash」となっているのに対して、その後出版された「American Bartender」(1891年)、「Modern American Drinks」(1895年)、「Dary's Bartenders' Encyclopedia」(1903年)、「Bartenders Guide: How To Mix Drinks」(1912年)という4冊では、判で押したように、「ウイスキーとスイート・ベルモット各2分の1ずつ、ビターズ1dash」というレシピになっている。 ウイスキーの割合が多くなる、すなわち辛口のマンハッタンが登場するのは、ハリー・マッケルホーンの名著「ABC of Mixing Cocktails」(1919年刊)が初めてである(レシピは、「ライ・ウイスキー3分の2、スイート・ベルモット3分の1、アンゴスチュラ・ビターズ1dash)。そして1930年代以降は、徐々にウイスキーの割合が多くなる「ドライ化」が進んでいく。 ◆日本にも外国人居留地で19世紀末には提供か 日本では、1907年(明治40年)出版の文献に初めて「マンハッタン」の名が見られる。遅くとも1890年代末までには、横浜や神戸の外国人居留地のホテルのバー等では普通に提供されていたことだろう(写真右下=1907年<明治40年>、日本で初めてマンハッタンを紹介した「洋酒調合法」のページ)。 なお、1957年(昭和32年)に出版されたカクテルブック「洋酒」(佐藤紅霞著)では、「マンハッタン・コクテール」として「ライ・ウイスキー2分の1、ドライ・ベルモット2分の1、アンゴスチュラ・ビターズ、クレーム・ド・ノワヨー(アーモンド風味のリキュール)各2dash」とあり、なぜかドライ・ベルモットを指定している。 スイート・ベルモットを使う場合は「スイート・マンハッタン」とわざわざ区別していることから、日本国内では、1950年代でもなお「マンハッタン」のレシピ(定義)は揺れていたようだ。 マンハッタンはマティーニ同様、レシピはシンプルだが、「バー(バーテンダー)の数だけバリエーションがある」というカクテル。辛口志向、ライト志向の昨今、少し敬遠されているのかもしれないが、難しいことはあまり考えず、貴方もたまには「マンハッタン」を味わってみてはいかがだろうか?【確認できる日本初出資料】「洋酒調合法」(高野新太郎編、1907年<明治40年>刊 ※欧米料理法全書の附録としての小冊子)。そのレシピは、「ウイスキーWineglass2分の1、スイート・ベルモット2分の1、オレンジ・ビターズ1~2dash、アブサン1dash、ガムシロップ1dash」となっている。【注1】著者のバイロンについて、復刻版の編者であるブライアン・レア氏は前書きで「O.H.バイロンという作家、研究者、バーテンダーが同時代に存在した歴史的資料は見当たらず、おそらくはこの本(原著)の出版社の編集者自身のペンネームか、あるいは(編集者が考えた)架空の人物ではないか」と記すが、だからと言って、この本の歴史的価値が下がることは一切ない。【注2】19世紀によく使われた液量単位で、1ponyは1オンス(ounce)=約30ml=にほぼ同じ。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第19回】 日本と世界、人気カクテルはなぜ違う ◆100年前、欧州の人気カクテルは… 20世紀初頭、欧米での人気カクテルと言えば、ミントジュレップ、シャンパン・カクテル、フレンチ75、アヴィエーション、オールド・ファッションド、サゼラック、ギムレット、ラモス・ジンフィズ、サイドカー、ロブロイ等々だった。米国では19世紀末頃からカクテル文化が花開き、欧州は人材や技術・情報面で後れをとっていた。 それから間もなく、米国は禁酒法施行(1920年)で「暗黒の時代」を迎える。家庭内の私的飲酒は違法ではなく、大都市には「もぐり酒場」が数多く存在したとは言え、酒好きの人間にはその後13年間もつらい日々が続くことになった(写真左=1911年当時のパリのハリーズ・バー)。 しかし欧州では、米国から海を渡ってきた数多くの腕利きバーテンダーたちのお蔭で、20年代、カクテルの黄金時代が幕を開けた。 「アメリカン(American)」は、ロンドンやパリでは「最新流行の」を意味する流行語になり、ロンドン・サヴォイホテルの「アメリカン・バー」やパリの「ハリーズ・ニューヨーク・バー」など、米国仕込みのカクテルが楽しめる酒場は、「アメリカン・バー」と呼ばれ、紳士淑女の社交場として大いに賑わうことになった(写真右=米国が禁酒法時代の1922年に欧州で刊行されたカクテルブック「Cocktails:How To Mix Them」=Robert Vermeire著)。 ◆辛口系・クラッシックが今もなお 約半世紀後の1976年。米国内でつくられた「最新人気カクテル(Recipes for the new “in” drinks)」という小冊子(写真下)を見る。 15種類のカクテルが紹介されているが、人気ランキング順で1~10位を紹介すると、マティーニ、マンハッタン、ウイスキー・サワ―、ブラディ・メアリー、ギムレット、ダイキリ、トム・コリンズ、オールド・ファッションド、マルガリータ、スクリュードライバー。1940~50年代に生まれた新しいカクテルも登場しているが、基本はそう変わっていない。 その後の人気ランキングはどうだろうか。様々な調査結果があるが、この5年年ほど欧米での1位~3位はほとんどがオールド・ファッションド、ネグローニ、マティーニである。ベスト10を見ても、コープスリバイバー、クローバー・クラブ、アヴィエーション、マンハッタン、ミント・ジュレップ、マルチネス・カクテル、サゼラックなどといった、日本国内のバーではほとんど注文されることのない、アルコール度数の高い、辛口系クラシック・カクテルが目立つ(写真右=「Recipes for the new “in” drinks」の中身はこんな感じ)。 ◆2000年以降は、クラシック再評価ブーム 海外、とくに欧米では2000年以降、クラシックなカクテルが再評価されるトレンドが起きている。「トレンド」には2つの流れがあって、現代の素材でクラシック・カクテルをできるだけ忠実に再現する試みと、クラッシックなレシピを元に21世紀風のアレンジを加える「ツイスト・カクテル」へのチャレンジであるが、どちらも賑やかだ。 例えばオールド・ファッションド(写真左)は、19世紀末に誕生した代表的なクラシック。ライ・ウイスキー(またはバーボン・ウイスキー)をベースに、アロマチック・ビターズ、角砂糖、氷、オレンジ・スライスなどというシンプルなレシピだから、アレンジもしやすい。 ネグローニも、ジン、カンパリ、スイート・ベルモットという3つの材料のコンビネーションなので、バーテンダーの「ひと工夫」の余地が大きい。マティーニも、近年ではフルーツ系材料との組み合わせや、エスプレッソ・マティーニなど進化系が人気だ。 ◆ほぼ半世紀、ランキングに変化ない日本 一方、日本はどうかと言えば、ここ30年ほど人気ランキングにほとんど変化はない。ベストテンでは、ジン・トニック、ジン・リッキー、カシス・オレンジ、ソルティドッグ、ギムレット、モスコーミュール、マティーニ、アレキザンダー、マルガリータ、カルア・ミルク、サイドカー…は常連。スクリュードライバー、ジャックローズ、ブラディ・メアリー、レッドアイ、スプモーニ、モヒート、チャイナブルーなども時々顔を見せるが、20位くらいまでを見ると、基本ランキングに毎年ほとんど変化はない。 「30年ほど」と書いたが、1960年での調査(出典:「洋酒天国」第40号)でもほぼ似たような顔ぶれで、この半世紀以上、日本人のカクテルの嗜好は驚くほど変わっていない。カクテル名を見て分かるのは、アルコール度数も軽めで飲みやすいものが目立つことだ。 毎年、国内の数々のコンクールで星の数ほど創作カクテルが誕生しているが、残念ながら甘口系しかほぼ勝ち上がれない。優勝してもバーで定着することなく、数年で忘れ去られてしまう。戦後国内で生まれた創作カクテルで、今なお全国のバーで飲み継がれているのは、雪国(写真右上)、ソルクバーノ、キングスバリー、オーガスタセブンなど数えるほどしかない。 ◆国際化とWEB情報の充実で変化の兆しも なぜ海外と日本でこれほど人気が異なるのか? 欧米では元々、クラシック・カクテル志向が強く、禁酒法という逆風もありながら、19世紀末から20世紀初頭に生まれたカクテルは根強く飲み継がれてきた。背景には、アルコール耐性が強い欧米人は度数の高い、辛口系カクテルも好むということもある。バーの現場では、歴史や先人の遺産を受け継いでいこうという文化がある。 一方で日本では、バー業界では従来から、「カクテルは主に女性客が頼むので、甘口系で軽い方が喜ばれる」「そもそも、アルコールに強くない日本人には外国人が好む強いカクテルは向かない」という先入観もあった。 なのでバーテンダーも、お客様には「軽くて甘口系のもの」を勧めがちだった(実際のバーの現場では、辛口系を好むお客様の方が多いにもかかわらず…)。 そもそも、日本では第二次大戦中の空白もあり、1940年代以前のカクテルを紹介する文献が出回るようになったのは、戦後の60~70年代以降。クラシック・カクテルについての歴史的知識やレシピ情報が決定的に不足していた。(写真左上=1950~60年代に日本で刊行されたカクテルブック)。 しかし近年は、古い時代の文献情報にも接しやすくなった。海外とのバーテンダーとの交流も活発となり、海外でのカクテルコンペに挑戦する日本人も多くなった。インターネットの普及で、海外でのクラシック回帰の流れを伝える専門のWEBマガジンを直接読める機会も格段に増えた。おそらくは、日本の人気カクテル・ランキングも今後、様変わりしていくだろうが、欧米との「違い」が縮まっていくのか、それでも日本独自の変化を遂げていくのか、それはとても興味深い。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第18回】 もう1人のハリー(下) ◆45歳で突然「引退表明」、経営者の道へ 「モーニング・グローリー・フィズ」(末尾【注1】ご参照)=写真左下=など数多くの歴史的カクテルを考案し、バーテンダーとして、大きな成功を収めたハリー・ジョンソン(1845~1930)は、45歳になった1890年、突然、「バーテンディングからの引退」を表明した。 バーテンダーとしての名声を確立し、「バーテンダーズ・マニュアル」の爆発的な売れ行きで莫大な収入も得た。そして、自ら経営するサロン・バー「リトル・ジャンボ」が成功するとともに、チーフ・バーテンダーを務めるレストラン「デルモニコ」でニューヨークの幅広い名士たちの信頼を勝ち得たジョンソンの興味は、次第に、飲食・娯楽ビジネスへ移っていった。 90年代のジョンソンは年々、経営者としてバーやホテル、社交クラブを運営し、新しい物件を買収しながら、事業の拡大を図っていく道を歩み始める。ニューヨークでは新たに自らのホテル「パブスト・グランド・サークル」を開業した。 1902年に開業した「パブスト…」は、豪華なレストラン・バー、サロン・バーのほかミュージカル用の劇場も備え、ニューヨークのセレブたちの集うスポットとして愛された。劇場ではあの「オズの魔法使い」も初演されたほど。 ジョンソンはまもなくして「パブスト」の運営を、信頼できる甥のポール・ヘンケルに託し、自らはニューヨーク・レストラン協会の会長にも就任するなど文字通り、米国内の「名士」となった(写真右=「Bartender's Manual」に初めて活字になったマティーニ)。 ◆大怪我、経営危機、離婚訴訟…次々と逆風 しかし、そんな彼に逆風が吹き始める。1903年、ジョンソンは自ら経営するホテル内で転倒事故に遭い、大怪我を負う。経営の実権をヘンケルに委任。自らは治療のため、母国ドイツに帰国した。ジョンソンから託されたヘンケルだったが、その後の事業は様々なトラブルもあって、負債も膨らみ、多くの事業が経営危機に陥った。 さらにジョンソンにとって不幸だったのは、妻との不和だった。1910年以降、怪我の後遺症の治療やドイツでの離婚訴訟のため、長期間米国を離れることが多くなった。 また、ほぼ同時に、第一次大戦が勃発したため、ドイツ系米国人だったジョンソンは、米国政府や地域社会から「適性外国人」のような扱いを受け、(米国の市民権は持っていたのに)出入国もすんなり行かないようになった(写真左=ジョンソンの著書に掲載されたマティーニのイラスト)。 大戦終結後、ジョンソンは再び米国に戻ったが、今度は禁酒法が経営危機に追い打ちをかけた。酒類の販売が禁止されると、彼の経営するバーや社交クラブ、ホテルなどの収益は大きく落ち込み、ヘンケルが引き継いだ事業のほとんどが廃業に追い込まれた。かと言って、ニューヨーク社交界・実業界の名士であるジョンソンは、「もぐり酒場」へ事業転換して、水面下で儲けるようなことまでは大胆なことは出来なかった。 ◆ドイツ系、第一次大戦、禁酒法という3つの不幸 禁酒法施行後、ジョンソンはビジネスの第一線から退き、主に欧州で自著のPR販売とバーテンディングの講師として活動を続けたが、体調はあまり回復でせず、1930年1月5日、心臓病と老衰のため、ベルリンで84歳の生涯を終える。臨終の際、付き添ったのは再婚した妻と主治医だけだった(写真右=晩年のハリー・ジョンソン)。 ハリー・ジョンソンにとっての晩年の「3つの不幸」は、彼がドイツ系だったこと、第一次大戦でドイツが米国の敵国になったこと、そして大戦終結後に米国に禁酒法が施行されたことだった。こうした時代的逆風と重なり、残念ながらビジネスマンとしての成功は叶わなかった。 しかし、米国のバー業界は彼のことを忘れていなかった。禁酒法時代(1920~33年)が明けた翌年の1934年、長らく絶版となっていた彼の『Bartender’s Manual』は、没後再び世に出て、ベストセラーになった(写真左は、1934年に復刻再刊された1890年版の「Bartender's Manual」。復刻版は現在でもAmazonなどで入手できる)。 ◆19世紀後半のカクテル事情の貴重な記録 彼の著書は、ジョン・コリンズ、プース・カフェ(以上1882年版)、マンハッタン、マティーニ(1888年版)、ハイボール、ジン・リッキー、オールド・ファッションド、ホーセズ・ネック、スノー・ボール(1890年版)など今なおバーで愛されているカクテルの初出文献なのである。この時代のフィズ類のカクテル、アブサン系のカクテルなど、19世紀後半のカクテルを数多く記録してくれている。 一方、ビジュー・カクテルやモーニング・グローリー・フィズなど彼の考案したカクテルは、近年のクラシック・カクテル再評価の流れに乗って、欧米のバーの現場では、再び人気カクテルの一つとして定着しつつある。ジョンソンはビジネスとしてバーの可能性を広げながら、カクテルの発展にも大きく貢献したことは疑いないと私は信じている。【注1】ウイスキー45ml、レモン・ジュース15ml、シュガー・シロップ2tsp、卵白1個分、アブサン(兄ゼットやペルノーなど)2dash、シェイクしてコブレットに注ぎ、ソーダで満たす(シェイク)※ハリー・ジョンソンの生涯は、欧米でもこれまで文献で詳しく紹介されることはなかった。しかし2013年、アニスタシア・ミラー(Anistatia Miller)とジャレッド・ブラウン(Jared Brown)という2人の研究者の共著として出版された「The Deans of Drink」が、ジョンソンの生涯に初めて光を当ててくれた。この稿の執筆でもこの本にはとてもお世話になった。この場をかりてお二人には厚く御礼を申し上げたい(日本語版の出版を心から願っています)。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第17回】 もう1人のハリー(上) ◆「バーテンディングの父」の称号を持つが… プロのバーテンダーなら、『ABC of Mixing Cocktails』を著したハリー・マッケルホーン、『The Savoy Cocktail Book』を生んだハリー・クラドックという2人の偉大なハリーの名を知らぬ人はほぼいないだろう。しかし、ハリー・ジョンソン(Harry Johnson)の名はどうか。 ハリー・ジョンソン=写真左=は、欧米のバー業界では「バーテンディングの父」の称号を持ち、スタンダードなクラシック・カクテルの一つ「ビジュー・カクテル(Bijou Cocktail)」(末尾【注1】ご参照)や「モーニング・グローリー・フィズ(Morning Glory Fizz)」「マルグリート・カクテル(Marguerite Cocktail)」などの考案者として、そして、「マティーニを活字として最も早く紹介した」カクテルブックの著者として、先に挙げた2人のハリーと同じくらい知られた存在なのだが、なぜか日本ではほとんど知名度はない。 ジョンソンが1882年に著した『Bartender’s Manual』という本は、約260種類のカクテルのレシピが収められているが(マティーニは1888年版から収録)、なぜかカクテルブックの歴史の中では、ジェリー・トーマス著の『How To Mix Drinks』(1862年刊)や、冒頭で紹介した『ABC of Mixing Cocktails』(1919年刊)、『The Savoy Cocktail Book』(1930年刊)ほど、重要な文献には位置付けられていない。 ◆16歳、怪我で下船したサンフランシスコで 実は、ジョンソンの本は、カクテルブックの体裁は持ちながら全体のほぼ半分は、バーテンダーとしての仕事の基本や心構え、訓練法、揃えるべき道具・器具、バー経営のノウハウ(資金や仕入れ他)等に割かれている。なので、どちらかと言えば、「バー経営のための手引き書」でもあるが、100年以上経った今なお、復刻版が販売され続けている。 しかし、バー業界やカクテル発展への多大な貢献ほどハリー・ジョンソンの名が歴史上、輝いていないのは、彼の波乱に満ちた数奇な運命が大きな理由である。そんな彼の生涯を2回に分けて振り返ってみたい。 ジョンソンは1845年、旧東プロイセンのケーニヒスブルグ(現ロシア・カリーニングラード)で生まれた。7歳の時、家族で米国へ移住し、14歳頃からは欧米航路の船員として働き始める。そんな彼がなぜバーテンダーの道を目指すことになったのか(写真右=ハリー・ジョンソンのオリジナルカクテル「ビジュー・カクテル<Bijou Cocktail>」)。 1861年、16歳の時、乗船中の事故で骨折したジョンソンは、寄港地のサンフランシスコで治療のため下船させられた。そこから彼の波乱の人生が始まる。怪我から回復したジョンソンは船の仕事には戻らず、市内のユニオンホテルで「キッチンボーイ」として働きの場を見つけた。ホテル内のバーの仕事に興味を持ったジョンソンは、オリジナルなカクテルを提案するなどして、バーで頭角を現す。 ◆「シカゴ大火」で壊滅的な損害 ジョンソンがサンフランシスコで働き始めて2年ほど経った頃、のちに「カクテルの父」とも称されるバーテンダー、ジェリー・トーマスが、市内のオクシデンタル・ホテルのチーフ・バーテンダーに就任する。 トーマスはジョンソンより15歳年上の31歳。この頃すでに名著『How To Mix Drinks』を出版し、全米レベルの知名度があるバーテンダーでもあった。二人は自然と出会って、何度か言葉も交わした。ジョンソンは、トーマスの姿にバーテンダーという仕事の魅力をさらに発見したに違いない。 そしてその後、ジョンソンはシカゴへ移って1868年、23歳の時、念願の自らのバーを開く。彼のバーはその豪華さでシカゴだけでなく全米でも話題の店となり、彼自身もたびたび講演を依頼されたり、地元新聞にカクテルのレシピを紹介する記事を執筆したりと知名度を増し、ビジネスマンとしての才覚も発揮していく。 ジョンソンは後年、「1869年に、ニューオーリンズで開催されたバーテンダー12人によるコンクールで見事勝ち抜いて優勝にした」とも言い残している(末尾【注2】ご参照。写真左=「優勝したコンクールの際のパフォーマンスの様子」として、ジョンソンが自著に掲載した絵)。 バーテンダーとして頂点を極めたように見えたジョンソン。しかし、そんな彼の絶頂を無残に打ち砕く出来事が起こる。1871年、シカゴの街を広範囲に焼き尽くした、いわゆる歴史的な「シカゴ大火」である。ジョンソンのバーももちろん焼失し、当時の金額で約10万ドル(現在なら約200万ドルに相当)の損害を被った。 ◆初の著書が欧米でベストセラーに 彼はやむなくシカゴを離れ、出版社からの経済的支援も得ながらゼロからスタートすることを決めた。そして6年後の1877年、ニューヨークの「リトルジャンボ」(奇しくもかつてのオーナーはジェリー・トーマス)というバーを購入。バーテンダー・スクールも併設し、後進の育成にも乗り出した。翌1878年には、高級レストラン・バー「デルモニコ」のチーフ・バーテンダーも任され、ここで地元の数多くの有力者から厚い信頼を勝ち得た。 しかし、理由はよく分からないが、ジェリー・トーマスとジョンソンの関係は悪化する。1880年9月のある日、トーマスはジョンソンの店を訪れ、「(自らのオリジナルカクテルでもある)トム&ジェリーは、気温が零下のときのみ提供されるべきだ。ジョンソンはアマチュアだ」と批判し、カップを床に投げ落としたという逸話まで残っている(出典:Wikipedia英語版)。 ジョンソンは1882年、冒頭にも紹介した『Bartender’s Manual』=写真右=を著した。当時としては爆発的な売れ行きとなり、版を重ね、英語版だけでなくドイツ語版も出版され、欧州でもベストセラーになった。シカゴ大火で大きな被害を受けた彼は、印税という形で大きな収益を得た。しかし1890年、彼は突然「バーデンディングからの引退」を表明する。バーテンダーとして大きな成功を勝ち得たにも関わらず、なぜ45歳の若さで表舞台から去ったのか。 <「下」へつづく>【注1】ジン30ml、スイート・ベルモット20ml、シャルトリューズ・グリーン20ml、オレンジ・ビターズ1dash、シェイクしてカクテルグラスに注ぎ、レモンピールを(分量表記は現代風に変えています)【注2】カクテル史研究者の間では「このコンクールについては、ジョンソン自身による後年の証言しかなく、実際に開催されたのどうかを確認できる史料は伝わっていない」という見解もある。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第16回】 名著『コクテール』が残した謎 日本で初めての体系的かつ実用的なカクテルブック『コクテール』を著したのは、前田米吉氏(1897~1939)=写真左下=である。今から96年前、1924年(大正13年)のこと。今なおバーテンダーの教科書とも言われる『サヴォイ・カクテルブック(The Savoy Cocktail Book)』(ハリー・クラドック著)が出版されるまだ6年前だった。 『コクテール』には、287種のカクテルが紹介されてが、それまでのカクテルブックが文章だけでレシピを表現していたのに対して、前田氏は「***2分の1、***3分の1」というように、今風の分かりやすい分量表記で示したのが画期的だった。 ◆あの『サヴォイ…』よりも進んだ内容 不思議なことに『コクテール』には、『サヴォイ・カクテルブック』で欧米で初めて紹介されたカクテルがいち早く、約30数種類(末尾【注】ご参照)も!登場している。その中には著者クラドックのオリジナルも含まれている。『サヴォイ…』出版より6年も前に、遠い東洋の日本で、どのように最新カクテルのレシピを知り得たのか? 大きな謎であり、カクテル史を学ぶ私のみならず、非常に興味をそそられるだろう。 私は、数年前に復刻版『コクテール』と題して、その全内容をブログ上で現代語訳で紹介したが、その際、「(前田氏は)日本で働いていた外国人バーテンダーを通じて、あるいはカフェ・ラインを訪れていた来日外国人客から直接、サヴォイ・ホテルのバーで1920年代につくられていたカクテルについて最新情報を得ていたのではないか」などと記したが、これはあくまで想像でしかない。 ◆ご子孫から予期せぬ嬉しい連絡 前田氏は著書刊行当時、東京・四谷の「カフェ・ライン」という店に勤めるバーテンダーということ以外、経歴等がまったく不明の謎の人物だった。私はご遺族と連絡をとって、前田氏のことをもっと知りたいとずっと願ってきた。 ところが2017年のある日、予期せぬ、大変な幸運が巡ってきた。ブログを見たという前田米吉氏のご子孫が、私が働くバーUKにまで直接ご連絡をくださったのだ。そして、直系のご遺族ではなかったが、米吉氏の姪に当たる女性(当時76)と、そのご長男(同46)が、それぞれ東京と栃木からわざわざ大阪の店までお越しくださったのだ(写真右=前田米吉氏著の『コクテール』=1924年刊)。 御二人からは、故・前田氏の経歴や親族に伝わっている人柄について、興味深いお話(情報・データも含め)がたくさん聞けた。嬉しいことに、貴重な未公開の写真も何枚か頂けたうえ、ご持参してくださった戸籍謄本や死亡届の写しからは、前田氏の生没年が正確に判明した。 ◆若干27歳で『コクテール』を著し、酒類ビジネスも 明治30年(1897年)生まれで、「コクテール」刊行時はまだ27歳の若さ。そして、亡くなったのは昭和14年(1939年)11月。42歳という夭折だった。鹿児島県の出身。四男三女の三男として生まれた。実家は造園業だった。23歳の時、2歳年上のユワという名の女性と結婚。戸籍を見ると子供が一人いたことが分かるが、すぐに亡くなっている。少なくとも直系の子孫はいないという。 上京した正確な時期は分からない。しかし、『コクテール』の前書きにも、「多年コクテールの研究者」だったと記されていることからも、結婚後まもない時期(少なくとも1921年までには)には東京でバーテンダーとして働いていたことは間違いない。上京後、前田氏は「カフェ・ライン」で職を得てカクテルの研鑽につとめ、その成果は数年後に『コクテール』という本に結実する(写真左=酒類販売店を開業した頃の前田氏)。 「カフェ・ライン」を退職後、昭和の初め、銀座に自らの酒類販売店を興した。洋酒だけでなく、瓶詰めのカクテルも販売し、1925年当時の新聞に広告を出すなどビジネスは順調だったことが伺える。しかし残念ながら御二人の話には、前田氏がなぜ、1924年の時点で海外のカクテルについて、あれほど詳しい情報(レシピなど)を入手できたのか?という長年の疑問に対する正確な答えはなかった。 ◆海軍から感謝状、欧州訪問に同行か? しかし、持参された未公開写真の一つに、その答えにつながるかもしれない驚きのヒントがあった。おしゃれな白っぽいスーツを着た前田氏が、なにやら額入りの感謝状のようなものを自慢げに手にした記念写真=写真右下=だが、その写真には旧海軍の軍艦が映っている。大正末期か昭和初期か時期は不明だが、この頃、海軍は欧州に「親善訪問」という名目で艦隊をたびたび派遣している。 このような感謝状をもらうということは、前田氏はひょっとしてこの艦に乗船して、料理や酒を振る舞う仕事をしたのではないか。そして欧州にまで同行したのではないか。そして、寄港した欧州各地で最新カクテルの情報を入手したという可能性があったとしても決しておかしくない。 日本のカクテル史の空白を埋める作業はまだ道半ばであるが、近い将来ひょっとして、どこからか前田氏の貴重なカクテルノート等が発見されることを、今は心から願っている。 【注】『コクテール』で6年早く登場する『サヴォイ…』収録のカクテル(29種):London Cocktail、Rosington Cocktail、Palmetto Cocktail、Nick’s Own Cocktail、White Cocktail(クラドックのオリジナル)、Trocadero Cocktail、Thistle Cocktail、Tipperary Cocktail、Chocolate Cocktail、Olivet Cocktail、Wax Cocktail、Raymond Hatch Cocktail、Racquet Club Cocktail、Whizz-Bang Cocktail、Velocity Cocktail、Vanderbilt Cocktail、Coopers Town Cocktail、Fairbank Cocktail、Froupe Cocktail、Coronation Cocktail、HPW Cocktail、Diabolo Cocktail、RAC Cocktail、Irish Cocktail、Sunshine Cocktail、Chicago Cocktail、Morning Cocktail、Monkey Gland Cocktail、September Morn Cocktail・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ ※掲載写真は、『コクテール』の表紙以外は、ご子孫の前田英樹氏の提供です(無断転載・利用は固くお断りします)。・連載「カクテル・ヒストリア」過去分は、こちらへ

WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第15回】 卵とカクテルの長くて切れない関係 「生卵を使ったカクテルを飲んだことはありますか?」。 バーにやって来る日本人のお客様にこう尋ねたら、おそらく、ほとんどの方は「いいえ」と答えるだろう。実際、私のバーで、「生卵を使ったカクテルがありますよ」と紹介しても、「えー⁈ 冷たいカクテルに生卵なんか入れるの?」と引かれることが多い。 意外と知られていないが、生卵とカクテルはとても相性が良い。生卵(卵白、卵黄、全卵)を使った有名なスタンダード・カクテルもいくつかある。生卵を入れると味わいが柔らかく優しくなり、喉越しがなめらかにクリーミーになる。全体に奥行き(ボディ感)が生まれる。しかし、現代のバーで生卵を使ったカクテルが提供する店は、そう多くない。そもそも、万一の食中毒事故を恐れて生卵を扱わないバーも少なくない。 ◆古来、欧米では「生命の象徴」だった 実は、欧米では卵とカクテルの歴史は古い。紀元前、ローマ人は卵を「生命の象徴」と考えていた、その考え方は、後にキリスト教がローマ帝国の国教となったことで、キリスト「復活」の象徴になった。それが「復活祭」の「イースター・エッグ(Easter Egg)」(写真左上)にもつながっていく。中世の英国では、牛乳にワインやシェリー、スパイス、砂糖を混ぜた「ポセット(Posset)」という温かい飲み物が生まれ、その「ポセット」にはその後、卵も加えられ、「滋養強壮の酒」「薬用酒(治療薬)」としても用いられた。 「ポセット」は18~19世紀頃には、「エッグノッグ(Egg Nogg)」という名前のカクテルとして発展して、上流階級から庶民にまで定着するようになった。米国へ伝わったエッグノッグはとくに人気を得て、ベースに使われる酒はブランデー、ラム、バーボン…と多彩になった(写真右は、17世紀前半に家庭で飲まれていたポセットのレシピ。「Sack Posset」の「Sack」とはシェリー酒のこと。この当時はこう呼ばれていた)。 ◆氷が貴重品であった時代の工夫として 19世紀の後半、バーテンダーたちは、冷たいカクテルが、生卵を入れることで味がなめらかに、柔らかくなることに気づいた。氷が貴重品であったこの時代、生卵を利用することは、結果として、カクテルを飲みやすくする工夫の一つにもなった。生卵を使うクラシック・カクテルは、現在伝わっているだけでも150種類近くある。 欧米で卵が普通にカクテルに使われるようになった背景には、このように宗教上の理由だけでなく、高い栄養価、そして薬としての効能、さらには氷に代わってカクテルを飲みやすくする効用という4つの理由があった。 ◆サルモネラ菌の発見で一時衰退 しかし、生卵を使ったカクテルは、1906年、米国の食品医薬品局(FDA)が19世紀後半に発見されたサルモネラ菌による食中毒の危険性を指摘したことでブレーキがかかった。バーの現場ではその後、殺菌法が提案されるまで、数十年間ほど衰退してしまった(現代では、殺菌処理された生卵が普通に売られており、消費期限内であれば、ほぼ100%中毒の心配はない)。 第二次大戦後、衛生管理された卵がコンスタントに提供されるようになり、欧米のバーの現場でも再び生卵を使ったカクテルが復権するようになった。 19世紀後半から20世紀前半の間に生まれたラモス・ジンフィズ、ピスコ・サワ―、ピンクレディ(写真左)など生卵を使ったカクテルも、近年の「クラシック・カクテル再評価」ブームの中で、再び注目を集めるようになっている。なかでも、ピスコ・サワ―は全米のバーの人気カクテルランキングでここ数年、常にベスト10に入っているという。 ◆「卵酒」は認知されていた日本だったが… 一方、卵酒というものが存在していた日本ではあるが、幕末の開国とともに入ってきたカクテル文化では、生卵を使うカクテルは、欧米のような宗教上の意味合いもなく、あまり普及しなかった。卵の栄養価の高さや、風邪をひいた時の薬効は認知されていたので、カクテルの材料として定着しても不思議ではなかったが、現在でも生き残っているのは、ミリオンダラーとマウント・フジくらいである。 現代の日本では、バーで生卵を使ったカクテルはほとんど注文されないし、バーテンダーもあまり積極的にはつくりたがらない。卵白、卵黄を分離する手間を敬遠しているのか、それとも(消費期限内であれば食中毒の可能性はまずあり得ないのに)万一のことを恐れているのかは、よく分からない。 私のバーでは、生卵を使ったクラシック・カクテルの素晴らしい味わいを再発見してもらうことを願って、オープン以来、メニューに常に7~8種類を載せている。皆さんも、もし機会があればぜひ、行きつけのバーで頼んでみてほしい。そのまろやかで、優しい味わいにきっと驚かれること間違いない。・WEBマガジン「リカル(LIQUL)」上での連載をご覧になりたい方は、こちらへ・連載「カクテル・ヒストリア」過去分は、こちらへ

雑誌&WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第14回】 昔、CocktailはMixed Drinkの一部だった ◆初めて活字になった「Cocktail」 今回は、知っていても知っていなくても、そんなにお得感のないトリビアですが、何卒ご容赦を。 「スピリッツにリキュールやジュース、シロップなどを混ぜたドリンク」は、現代では「カクテル(Cocktail)」と呼ばれる。このCocktailという言葉が初めて活字になったのは、Wikipedia英語版によれば、1806年5月13日付の週刊誌「バランス・アンド・コロンビアンレポシトリー(The Balance and Columbian Repository)」の記事だったと言われている。 記事中、「What is “Cocktail” ?」という質問に対して、編集長はこう答えている。「Cocktail is a stimulating liquor, composed of spirits of any kind, sugar, water, and bitters.(カクテルとは、お好きなスピリッツと砂糖、水、ビターズを混ぜた刺激的なお酒です)」。ただし、その後現代に至る様々なカクテルブックをみれば、この定義は厳密には守られてこなかったこともわかる。 ◆細かく分類された「Mixed Drink」 冒頭に示したような「カクテルの定義」が定着したのは、意外かもしれないが、1950年代以降である。1940年代までは、カクテル=Cocktailはいわゆる「Mixed Drink」というお酒全体の1ジャンルでしかなかった。 例えば、1862年に世界で初めて出版されたJerry Thomas著の体系的なカクテルブック「Bartender’s Guide and How To Mix Drinks」では、約230余のドリンクが収録されているが、同書の中で「Cocktail」という項目に登場するのはわずか10数種類で、他のドリンクは、Punch, Egg Nogg, Julep, Smash, Cobbler, Crusta, Sangaree, Toddy, Sling, Fix, Sour, Flip, Negus, Shrub, Fancy Drinksという項目に分類されている。すなわち、CocktailはJulepなどと同格のMixed Drinkの一つとして扱われていたのである。 このような「分類・区分け」は、この約70年後に出版されたHarry Craddockの名著「The Savoy Cocktail Book」(1930年刊)でも基本的に同じで、Cocktailという独立した項のほか、SourやCooler, Collins, Fizz, RickyからCupまで約20種類のジャンルに分類している(ただし、この本が編まれた20年代になると、バーテンダーのオリジナルも次々と登場してきたため、Cocktailの項目は全体の約7割に増加している)。 ◆ThomasやCraddockの時代は… ここで分かることは、現代における「カクテルの定義」と、19世紀~20世紀初頭のバーテンダーが考えていた概念とは、明らかな「違い」があったということだ。 具体的に言えば、ThomasやCraddockの時代は、スピリッツやワイン、リキュール類、それにジュース類、シロップ、ビターズだけを使って、シェイクかステアでつくり、基本ショート・スタイルとして提供する場合をCocktailと呼んでいた。他の副材料(具体的にはソーダやジンジャー・エール、生フルーツ類など)が加えたり(または作り方を変えたりし)、ロング・スタイルで提供する場合は、それぞれ独自の名前で呼んでいた。 例えば、Coolerとは「スピリッツ+柑橘系ジュース+砂糖(シロップなど)+ジンジャー・エール」でつくる場合、Sourとは「スピリッツ+レモン・ジュース+砂糖」だけでつくる場合、Smashとは「スピリッツ+シロップ+クラッシュド・アイス+生ミント(お好みで)」を小ぶりのグラスで提供する場合(大ぶりのグラスだとJulepという名に変わる)とか、細かい区別があったが、例えばFizzとCollinsとSlingなど実質的な違いがほとんどないものもあった。 ◆時代とともに変質していったCocktailの概念 そして現代では、Mixed Drinkという言葉は、ほぼ死語になり、ジャンルを問わずCocktailと呼んでいる。いつ頃からCocktailに集約されるようになり、そのきっかけは何だったのだろうか? 今回、手元にある19世紀後半から1960年代までの欧米のカクテルブックを丹念に読み込んでいくと、以下のようないくつかの事実に気づく。 (1)Mixed Drinkは、昔はシェイクやステア、ビルド中心だった。その後、ブレンダーの普及やリキュールなど副材料の多種多様化などもあって、旧来のジャンル分けやグラスの違いでは説明できないような多彩なものが次々と誕生してきた (2)様々なMixed DrinkがCocktailとして集約されるのは、戦後、ウオッカやテキーラなど新しいスピリッツがカクテルベースとして普及したのも一つのきっかけ。60年代以降は、多彩な創作カクテルが登場する一方で、レシピの世界標準化も進み、細かい分類が実態に合わなくなってきた (3)時代が進み、新たな創作カクテルが「スタンダード」として定着していくにつれて、古典的な名前のMixed Drinkは人気を失い、バーの現場であまり作られないようになってきた 以上の事実を踏まえ、個人的な見解も交えて記せばーー。 カクテルベースが多様化し、地球規模で様々なオリジナル・カクテルが毎年数多くつくられるようになり、相対的に、昔のような些細な違いに基づく区別はあまり意味をなさなくなった。結果として、Cocktail以外のMixed drinkはCocktailという言葉に集約され、古典的なスタイルのMixed Drinkは、次第にその名前自体が忘れられてしまうことになったのではないか。 70年代以降に出版されたカクテルブックでは、ご存知のように、Cocktailという大項目があるだけで、ほとんどはアルファベット順か、ベース別かで収録・紹介され、SourもFizzもRickyもJulepもすべて、Cocktailの一つとして掲載されている。 時代の流れや飲み手の嗜好に応じて今後も、自然に、かつ当然のこととして、Cocktailの定義や分類法も変わっていくだろう。21世紀は果たして、Cocktailはどう「進化」していくのか興味は尽きない。・連載「カクテル・ヒストリア」過去分は、こちらへ・こちらもクリックして見てねー!→【人気ブログランキング】

雑誌&WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第13回】 「マウント・フジ」は有名なれど… 「マウント・フジ」はもちろん日本を代表する名峰。海外でも知名度は抜群だ。そして、その名も「マウント・フジ」という国内ではそこそこ有名なカクテルがあるが、なぜか1920~30年代に誕生したという3つのレシピが現在伝わっている。 一番有名なのは、帝国ホテルのインペリアル・バーで誕生したもの(写真左)で、現在でも同ホテルの看板カクテルだ。レシピは 「ジン(45ml)、レモン・ジュース(15ml)、マラスキーノ・リキュール1teaspoon(以下tspと略)、パイナップル・ジュース1tsp、シロップ1tsp、卵白(1個分)、生クリーム2tsp、マラスキーノ・チェリー(飾り)」という複雑な材料からなる。 同ホテルのHPでは、「1924年(大正13年)、当時増えてきた日本を訪れる外国人観光客をもてなすために考案された」と紹介されているが、近年の研究で、誕生時期は少し遡り1922~23年頃で、考案者については、当時帝国ホテルの支配人から依頼されたチーフ・バーテンダーの大阪登章氏だったことが分かってきた(出典:洋酒文化の歴史的考察「帝国ホテルのマウント・フジ」=WEBマガジン「Food Watch Japan」=https://www.foodwatch.jp =での石倉一雄氏による連載)。 もう一つの「マウント・フジ」は、1933年(昭和8年)、スペイン・マドリードで開かれた国際カクテルコンクールに、日本バーテンダー協会(当時JBA、後にNBA)が出品したもの。(レシピは細かい部分で二転三転し)現行レシピでは「ホワイト・ラム(20ml)、スイート・ベルモット(40ml)、レモン・ジュース2tsp、オレンジ・ビターズ1dash」。残念ながら現在、日本での知名度は帝国ホテル版には及ばない(写真右=開業した頃の帝国ホテルの絵葉書)。 最後3つ目の「マウント・フジ」は、1937年(昭和12年)、有名な箱根・富士屋ホテル内にある「酒場」(昭和50年代からは「バー・ヴィクトリア」と改称)で生まれた。レシピは「ジン(25ml)、パイナップル・ジュース(40ml)、レモン・ジュース(10ml)、マラスキーノ・リキュール1tsp、シロップ1tsp、卵白(半個分)」というシンプルなもの。帝国ホテルとの違いは、マラスキーノ・チェリーと生クリームの有無。 なぜ富士屋ホテルにも「マウント・フジ」というオリジナル・カクテルがあるのか? 単にホテル名に「富士」があるからなのか? その理由は、富士屋ホテルの二代目社長・山口正造の経歴に答えがある。 山口は初代帝国ホテルの建物が火災で焼失した直後の1922年6月、帝国ホテルの臨時支配人に招聘された(すなわち「帝国ホテル版」に登場する「当時の支配人」とは、山口正造なのだ!)。 山口はわずか10カ月で富士屋ホテルに戻るが、「帝国ホテル版マウント・フジ」考案でもリーダーシップをとったという自負もあり、「帝国ホテル版」を簡略化したレシピにアレンジして、自らのホテル・バーの看板カクテルにしたらしい(写真左=現在、富士屋ホテル版マウント・フジは同ホテル内のバー・ヴィクトリアで提供されている)。 ちなみに、「マウント・フジ」は日本ではとても有名なカクテルなので、当然、欧米のカクテルブックにも紹介されているのかと思われがちだが、実はほとんどない。現時点で調べた限りでは、「コンプリート・ワールド・バーテンダー・ガイド(Complete World Bartender Guide)」(Bob Sennett編、2003年刊)くらいだ(ちなみに「帝国ホテル」レシピです。他の洋書での収録例をご存知の方はぜひご教示ください)。 ところが、現在欧米のカクテル専門サイトでは、とても不思議な事実に出合う。「Mount Fuji Cocktail」で検索してヒットすると、そのほとんどは「Japanese Sake(日本酒)45ml、Sweet&Sour Mix【末尾注ご参照】45ml、Orange Liqueur2tsp(シェイクまたはステア)、飾り=Lemon Slice & Maraschino cherry」という日本ではまったく知られていないレシピの「Mount Fuji Cocktail」=写真右=である(出典:drinkmixer.com/drink9742.html ほか多数。写真は「https://www.justapinch.com/recipes/drink/cocktail/mount-fuji-cocktail.html」から)。 この日本酒ベースの「マウント・フジ」、2010年頃から欧米の専門サイトを席巻し始めたが、考案者はJanin Sayunという素性不明の米国カリフォルニア州在住の女性。大変よくできたレシピのカクテルだとは思うが、日本人としては、やはり帝国ホテル版(または富士屋ホテル版)の「マウント・フジ」が、「名峰」と同じくらい世界中で知られる存在になってほしいと願う。そのためにも、国際的な発信力をもっと強くすることが日本のバー業界の課題かもしれない。【注】レモン・ジュースにシロップを加えたリキュールまたはドリンク。カクテルによく利用される。欧米では一般的なリキュール(またはシロップ)として、大手のローズ社など様々な商品が販売されている。【おことわり】この項の執筆にあたっては、洋酒ライター・石倉一雄氏のFood Watch Japanでの連載「赤くなかった“赤富士”」(2012年2~4月)「帝国ホテルのマウント・フジ」(2013年2~6月)から貴重な情報を数多く頂戴いたしました。心から感謝申し上げます。こちらもクリックして見てねー!→【人気ブログランキング】

雑誌&WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第12回】 タイタニックで飲まれていたカクテルって何? 「タイタニック号」=写真左下=と言えば、1912年(明治45年)4月15日、処女航海でニューヨークへ向かう途中、北大西洋上で氷山と衝突して沈没、約1500人もの乗客、乗員が犠牲となった悲劇の大型客船。映画「タイタニック」(1997年公開)をご覧になった方なら、一等船客たちが豪華なダイニング・ルームで、美味しそうな食事とお酒を楽しむシーンはご記憶にあるだろう。 タイタニックは、当時最新の4万6000トンもの大型客船だった。当然、最高級のお酒や食材が積み込まれていた。この頃、飲食の現場に普及し始めていた電気冷蔵庫や人工製氷機ももちろん完備されていた。 1997年にカナダで出版された「Last Dinner On The Titanic」(Rick Archbold & Dana MaCauley共著)=写真右下=という本によれば、タイタニックには、約70種類のシャンパンと約110種類の赤、白のワイン(フランス産やドイツ産、イタリア産など)、シェリー、マディラワイン、ポートワイン、ビール、各種スピリッツなどがストックされていたという。 映画「タイタニック」ではカクテルを飲むシーンは出てこないが、船内では、1912年当時すでに人気のあったカクテルが食前酒や食後酒として、主に一等船客に楽しまれていた。バーテンダーとしては、どんなカクテルが提供されていたのかに凄く興味が沸くが、同書には肝心のカクテル名については言及がない。 運航会社(ホワイトスター・ライン)が今は消滅していて一次資料がほとんど残っていないこともあり、著者らにもそれ以上突っ込んで調べたいという興味や探求心はなかったのだろう。 処女航海時、船上で提供されていたカクテルとして唯一、記録に残っているのは、一等船客に提供されていたディナー・コースに登場する「パンチ・ロメーヌ(Punch Romaine)」である。レシピの詳細は不明だが、このパンチはすでに19世紀半ばから欧米のバーではかなり知られていたドリンクだった。 同書は「クラッシュド・アイス4分の3カップ(約180ml相当)、シャンパン65ml、白ワイン30ml、シロップ約30ml、オレンジジュース10ml、レモンジュース4分の3 teaspoon、ホワイト・ラム(最後にスプレイ)、オレンジピール(最後に飾る)。ラムとオレンジピール以外の材料をブレンダー入れてつくる」と推定レシピを紹介している(※レシピは8人分なので、1人分用に換算した)。 出来上がりはパンチというより、口直しのシャーベットのような雰囲気。このパンチは、ファーストクラス船客のための豪華なディナー・コースの6番目に登場した(ちなみに、この後、ローストした小鳩<Squab>、アスパラガスのサラダ、フォアグラ、デザート、フルーツ&チーズと続く)。 実はタイタニックの船内にはカフェはあったが、なぜか、独立したバー・ルーム(コーナー)は設けられなかった。セレブな船客たちは、大食堂のそばのカフェで食前酒や食後酒を楽しむことができた。欧米のカクテル専門サイトでも、「最新、最高級のタイタニックでは、きっとカフェでも最新流行のカクテルが提供されていたはずだ」と記す。人工製氷機も常備していたので当然、氷を使ったロング・カクテルやシェイカーを振るショート・カクテルの提供も可能だったろう。 果たしてどんなカクテルが飲まれていたのか? 信頼できる手掛かりが一つある。タイタニックの1年前に建造された、ほぼ同規模の姉妹船オリンピック号のCafé Parisian(タイタニックのCaféもなぜか同じ名前だった)のドリンクメニュー=写真左=が幸い残っている。 そのメニューには、サイドカー、アレキザンダー、マンハッタン、ロブロイ、ブロンクス、マティーニ、シャンパン・カクテル、エッグノッグ、ジン・フィズ、ジン・リッキー、トム・コリンズなど現在でも人気のカクテルの名が見える。これらのカクテルは(サイドカー以外は)1900年前後に欧米で出版されたカクテルブックにも登場している。タイタニックでもほぼ同様のカクテルが提供されていたことは、まず間違いない。 タイタニックには、豪華客船の処女航海ということもあって、ニューヨークに戻る(あるいは訪れる)セレブも数多く乗船していた。なので当然、1900年代のニューヨークで流行っていた(あるいは流行り始めていた)というバンブーやジャック・ローズ、ダイキリも飲まれていたのではないかと私は想像している。 次回タイタニックの悲劇をテーマにした映画をつくる際には、どうか船客がカクテルを飲むシーンも入れてほしい心から願っている。バーテンダー役はもちろん、中高年に達した渋いレオ様で。こちらもクリックして見てねー!→【人気ブログランキング】

雑誌&WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第11回】 バンブーは「日本生まれ」ではなかったのか? 「バンブー」は、「ドライ・シェリー、ドライ・ベルモット、オレンジ・ビターズ」でつくるカクテルで、現代のバーでもよく注文されている。 考案したのは「1890年(明治23年)、その前年に来日していた横浜グランドホテルの支配人・ルイス・エッピンガーで、一足早く誕生した『アドニス』というカクテルのバリエーションとして誕生した」と多くのカクテルブックで紹介されてきた。そしてバンブーは、長年、「日本生まれの国際的なカクテル第1号」という称号を得てきた。 ところが、である。2018年、日本のフレア・バーテンダーの第一人者でカクテル史の研究家でもある北條智之氏(横浜・バー「ネマニャ」オーナー)によって、衝撃的な新事実が報告された。 海外で「バンブーは1890年以前に、米国で誕生していたのではないか」という指摘があることを知った北條氏は、米国で1885~1890年頃に発行された新聞紙上で、バンブーのことが何か取り上げられていないかを調べてみた。 すると、少なくとも3つの新聞で、「1886年には、すでにニューヨークの酒場で流行していた」ことを伝える紙面を見つけたのだ。例えば1886年9月11日付のカンザス州発行の新聞では、「ある新しいドリンクがニューヨークのバールームで流行っている。レシピはシェリー4分の3、ベルモット4分の1というもので、”バンブー”と呼ばれている」と記されていた。 しかし、実は1890年以前に流通していたベルモットは、ほとんどがスイート・ベルモットである。ドライ・ベルモットがバーで本格的に使われるようになるのは1910年以降。実際、欧米のカクテルブックで「バンブー」が初めて登場するのは、1900年刊の「The Cocktail Book: Sideboard Manual For Gentlemen」だが、そのレシピは当然、スイート・ベルモットを使っている(写真右=「バンブー」を考案したと言われるルイス・エッピンガー)。 一方、バンブーの元になったという「アドニス」は1884年頃に誕生し、まもなく「バンブー」も誕生するが、当時のカクテルブックで、バンブーとアドニスの両方を収録している例を見ると、アドニスは「シェリー3分の1、スイート・ベルモット3分の2、オレンジ・ビターズ1dash」、バンブーは「シェリー3分の2、スイート・ベルモット3分の1、オレンジ・ビターズ1dash」。 すなわち、誕生当時の「アドニス」と「バンブー」はスイート・ベルモットの割合(分量)だけで区別されたカクテルだったのだ。ちなみに1915年頃までの文献に登場するバンブーは、ほんどがスイート・ベルモットを使っている。 では、エッピンガー考案説までも否定されてしまうのか。欧米のカクテルブックでドライ・ベルモットを使ったバンブーが初めて登場するのは、現時点で確認できた限りでは、1908年刊の「World Drinks and How To Mix Them」(William Boothby著)で、この本では「バンブーは、横浜グランドホテルのエッピンガーが考案した」と紹介している。 そして欧米では、1920年頃までは、ドライとスイートそれぞれのベルモットを使う「バンブー」が混在している(写真左=創業の頃の横浜グランドホテルの絵葉書)。 以下は、私の個人的な想像を交えた総括。 バンブーは、エッピンガーが考案したかはどうかは別にして、1886年の時点ですでに米国の東海岸地域で誕生していた。ただし、当時はスイート・ベルモットを使うバンブーだった。エッピンガーは来日前、サンフランシスコでホテルの支配人やバーテンダーをしていた。そして当時のバンブーのレシピを携え、1889年に日本(横浜)へ赴いた。 翌1890年、エッピンガーは(横浜で)米国でのバンブーのレシピをアレンジして、ドライ・ベルモットを使うバージョンをつくった(ただし、名前は「バンブー」のまま通した)。そして、そのバンブーがまもなく米国へ伝わって人気を呼び、それまでのスイート・ベルモット・バージョンにとって代わられた。 結論として、現時点では、ドライ・ベルモットを使う現代の標準的なバンブーが「エッピンガーが横浜で考案した日本生まれのカクテルである」と否定する証拠も見当たらない。そしてもし、エッピンガーが考案者でなくとも、「バンブー」の世界的普及に最も貢献した人物であることは間違いないだろう。【おことわり】本稿の作成にあたっては、本文中にも登場する北條智之氏に数多くの情報、示唆を頂戴いたしました。心から感謝申し上げます。こちらもクリックして見てねー!→【人気ブログランキング】

雑誌&WEBマガジン「リカル(LIQUL)」連載 【カクテル・ヒストリア第10回】 アドニスはどんなシェリーを愛したのか? アドニス(Adonis)とは、ギリシャ神話に登場する、美と愛の女神「アプロディーテ」に愛された美少年。カクテルの世界では、シェリーを使った有名なスタンダード・カクテルとして知られる。現代の標準的なレシピは「ドライ・シェリー4分の3、スイート・ベルモット4分の1、オレンジビターズ」というシンプルなもの。 誕生したのは1884~85年頃のニューヨーク。当時ブロードウェーで大ヒットしたミュージカル「アドニス」にちなんで考案されたと伝わる。 カクテル「アドニス」が初めて活字で紹介されたのは、現時点で確認できた限りでは、1913年にジャック・ストローブ(Jacques Straub)が著した「Straub’s Manual of Mixed Drinks」。レシピは、「シェリー3分の1、スイート・ベルモット3分の2、オレンジビターズ2dash」と、現代と比べてやや甘めである。 アドニスに使う「シェリー」は、現代では辛口の「フィノ」が一般的だ。しかし、一口にシェリーと言っても、辛口から超甘口まで幅広い。個人的には、誕生当時はどんなタイプのシェリーが使われたのだろうか、当時「フィノ」はすでに存在していたのだろうかと、長い間疑問に思ってきた。 シェリー研究家の中瀬航也氏(五反田「シェリー・ミュージアム」オーナー)によれば、1823年にフィノが登場するまでは、ほとんどはオロロソかミディアムだった。しかし1850年頃には、フィノの代表的銘柄「ティオペペ」が、欧米で人気商品となっていた。そして、(アドニス誕生当時の)1885年頃には、ほぼすべてのタイプのシェリーが商品化されていたという(ただし、アモンティリャードは貴重品だったらしい)。 なので、結論としては、すべてのタイプのシェリーが使えたけれども、アドニスはおそらく、当時一般的な人気を確立していた「フィノ」を使って考案されたとみるのが自然だろう(写真右=ミュージカル「アドニス」に主演したヘンリー・ディクシ―<Henry Dixey>)。 しかし、時代が変わればレシピも微妙に変わる。クラシック・カクテルが再評価され始めた欧米では、90年代後半以降、アドニスに、「アモンティリャード」や「オロロソ」を使う例が目立つ(グーグル検索上位の欧米のWEBカクテルサイト10カ所で、アドニスのレシピを調べてみたら、フィノ5、アモンティリャード2、オロロソ2、マンサニージャ1だった)。 同じくシェリーとベルモットを使う有名なカクテル「バンブー」(1885~90年頃誕生)はドライ・ベルモットを使うので、シェリーはやはり「フィノ」がベスト・マッチだろうが、スイート・ベルモットを使うアドニスは、「フィノよりもう少し重く、甘味を感じるシェリーの方が合う」と記すサイトもある。確かにある意味、理にかなっていると思う。 最後に余談を一つ。有名な「The Savoy Cocktail Book」の初版本(1930年刊)にはもちろん「アドニス」も「バンブー」も収録されているが、バンブーはシェリーのほかドライ、スイートの両方のベルモットを使うレシピ。筆者の知る限り、唯一の例だ。しかし残念なことに、バンブーは巻末の追補部分に載っているためなのか、2002年に出版された日本語版の初版復刻本ではこの追補部分が抜け落ちている。これは日本のカクテルファンにとって、とても不幸なことだと思っている。【おことわり】本稿の作成にあたっては、本文中にも登場する中瀬航也氏に数多くのご助言、示唆を頂戴いたしました。この場をかりて心から感謝申し上げます。こちらもクリックして見てねー!→【人気ブログランキング】

【カクテル・ヒストリア第9回】 「マティ-二」だけじゃなかったボンド 「マティーニ」好きな有名人は数多いが、映画や小説の主人公・ジェームズ・ボンドは、なかでもナンバー1かもしれない。 ボンドのマティーニと言えば、シェイクスタイルの「ウオッカ・マティーニ」と、ウオッカ、ジン、キナ・リレ(フランス産のヴェルモット)を使う「ヴェスパー(Vesper)」という名のマティーニが有名だ。かのお決まりのセリフ「Shaken, not stirred(ステアでなく、シェイクしてくれ)」は通常、ボンドが前者のマティーニを注文する際、口にするものだ。 「ヴェスパー」(写真左)は、1953年に出版されたボンド・シリーズの処女作「カジノ・ロワイヤル」の中で初登場。その名はボンドの恋人役、ヴェスパー・リンド(Vesper Lynd)に由来する。原作者のイアン・フレミングが考案したとよく紹介されるが、実際に具体的なアイデアを提供したのはフレミングの友人でもあるバーテンダーだったという。 意外かもしれないが、スクリーン上でのヴェスパー初お目見えは、通常のボンド・シリーズではなく、1967年、ピーター・セラーズ主演で制作されたコメディ版のボンド映画だった。このセラーズ版ボンド映画は“色物”的な扱いを受けたので、当初、ヴェスパー自体もあまり話題にならなかった。 しかし2006年、ダニエル・クレイグ主演で再度映画化された「カジノ・ロワイヤル」にヴェスパーが再登場したことで、大ブレイクする。カジノでのシーン。ボンドはレシピを細かく指示する。 「メジャーカップでゴードン(ジン)を3杯、ウオッカを1杯、キナ・リレを半杯。キンキンに冷えるまでシェイクして、薄くスライスした大きめのレモンピールも添えてくれ」(なお、「ヴェスパー」に欠かせないキナ・リレだが、残念ながら現在は製造中止で、昨今バーの現場では、復刻版として商品化された「リレ・ブラン」が代用されることが多い)。 この映画の中の別シーンで、バーテンダーから「シェイクしますか?それともステア?」と尋ねられたボンドの答えも面白い。「そんなこと、私がこだわるように見えるかい?(Do I look like I give a damn?)」。 ちなみに、映画でのボンドはウオッカ・ベースのマティーニしか飲まないが、小説の中では、合計19杯もジン・マティーニを飲んでいるという事実を調べあげた奇特な方もいるから、ボンド・マティーニの話題は尽きることはない(出典:「the Spruce Eats」という専門サイト)。 なお、2015年に出版された『BOND COCKTAILS』という洋書(写真右上)には、ボンドお気に入りのマティーニを始め、フレミングの原作やボンド映画に登場したカクテルが20種類以上(サゼラック、ネグローニ、スティンガー、サイドカー、モスコー・ミュール、モヒート、ミント・ジュレップ、アメリカーノ、キューバ・リブレ、シンガポール・スリング、オールド・ファッションド、ブラック・ベルベット、ピンク・ジン等々)が紹介されており、見ているだけでも楽しい。ボンド好きの方には超お勧めの本です。◆ご参考 → 雑誌「リカル(LIQUL)」での連載(9)です。

【カクテル・ヒストリア 第8回】 ヘミングウェイが愛した特製ダイキリ 文豪アーネスト・ヘミングウェイ(1899~1961)=写真左下=は、カクテルの歴史にその名を残す著名人の一人である。カクテルブックがダイキリやモヒートを紹介する際、しばしばその名が一緒に登場する。 ヘミングウェイと言えば、1930年代から亡くなる1961年までキューバを愛し、首都ハバナを拠点に暮らしたことでも知られている。「わがダイキリはフロリディータにあり、わがモヒートはボデギータにあり」という有名な言葉も伝わっているように、ハバナでは愛飲するカクテルを飲むバーにもこだわりを持っていた。 ダイキリと言えば通常、「ホワイト・ラム、ライム(またはレモン)・ジュース、シロップ」というのが基本レシピだが、ヘミングウェイが大好きだったフローズン・タイプの特製ダイキリ=写真右下=は、少し違った。 30年代に誕生したというそのレシピは「ラムはダブル(90ml?)、ライム・ジュース2分の1~4分の1個分、グレープフルーツ・ジュース2分の1個分、マラスキーノ6dash、クラッシュド・アイス(たっぷりと)、 シェイク」とかなりキツめである。ヘミングウェイは「砂糖抜きで」「ラムはバカルディ・ホワイトで」と指定したという。 この特製ダイキリは当初は「パパ・ドブレ」と呼ばれたが、今日では「パパ・ダイキリ」または「ヘミングウェイ・スペシャル」の名で伝わる。考案したのはフロリディーダのオーナー、コンスタンティーノ・リバライグア。スペイン出身のリバライグアは、30年代のスペイン内戦に従軍記者として参加したヘミングウェイとは、心を許し合う仲だった。 ヘミングウェイが、どれほどこのオリジナル・ダイキリを愛していたかは、「彼は店でいつもパパ・ダイキリを12杯くらいは飲んだ。さらに魔法瓶に6~7杯分詰めて持ち帰った」という友人の証言が伝わる。 店内と魔法瓶とを合わせると飲んだラムは、ほぼボトル1本分以上。いったいどれだけ酒に強かったのか(写真左=ヘミングウェイがハバナで愛したバーの一つ「ラ・フロリディータ」。現在でも観光客で賑わう。(C)pinterest.com/lafloridita )。 ちなみに、ダイキリ&モヒートのイメージが強いヘミングウェイだが、実はジン・トニック(ジンはゴードン)や、ウイスキーのソーダ割りも好きなドリンクだったという。お気に入りのウイスキーはデュワーズ、ヘイグ、ジョニー・ウォーカーだったと、彼の所有する釣り船の船長が証言を残している(出典:「キューバのヘミングウェイ」シロ・ビアンチ・ロス著、海風書房刊)。こちらもクリックして見てねー!→【人気ブログランキング】

【カクテル・ヒストリア第7回】 ブラディ・メアリー後編:名前を消され、ベースも変えた過去 「ブラディ・メアリー」の考案者、フェルナンド・プティオ(1900~1974)は、「1920~21年頃考案した」と証言したが、1920~30年代の欧米のカクテルブックでの収録例は、なぜか見当たらない。 プティオが当時働いていたパリのハリーズ・バーではそれなりに飲まれていたはずだが、20年代の欧州ではさほど普及しなかった(米国はこの時期は禁酒法時代なので当然だけれど…)。個人的にはこれが不思議で、その理由をずっと探ってきた。 調べていくうちに、その理由がいくつか見えてきた。まず、20年代前半のパリでは、カクテルに使える手軽な缶入りのトマトジュースはまだなかった(米国から輸入され始めたのは25年前後なので、生トマトを濾してジュースを得るしかなかったろう)(写真左=ブラディ・メアリー考案についてのプティオの証言を掲載した雑誌記事)。 ウオッカも、ロシア革命(1917年)のあと西側へ亡命した蒸留業者がポーランドなどで生産を再開していたが、西欧地域での供給量はまだ十分ではなかった。なので、ハリーズ・バーで提供できた「ブラディ・メアリー」の量も限定的だったろう。 1934年、プティオはハリーズ・バーを辞めて、禁酒法が廃止された米国へ渡る。ニューヨークのセントレジス・ホテルのチーフ・バーテンダーに迎えられたが、オーナーから、「ブラディという名は印象が良くない」と言われ、仕方なく、「レッド・スナッパー(Red Snapper)」という名に変えた。おまけに米国では当時ウオッカがほとんど出回ってなかったことから、ベースもジンに変えざるを得なかった。 加えて、「レッド・スナッパー」は当初、米国では「味が平凡だ」と不評だった。そこでプティオは塩、胡椒、レモンジュース、ウスターソースなどを加えて、味を複雑にする工夫を加えた。これが逆に、「最新の流行りもの好きな」ニューヨーカーに受けたという。 1939年、米国のヒューブライン社がスミルノフの製造・販売権を取得。米国への本格輸入も始まった第二次大戦後には、スミルノフ・ウオッカの販促カクテルの一つに「ブラディ・メアリー」が採用されたこともあって、その名が復活する。 そして1948年、米国の著名なカクテルブック「The Official Mixer's Manual」(パトリック・ダフィー著)の改訂版(写真右)で、「ブラディ・メアリー」は初めて活字で紹介された。プティオの米国流アレンジも程なくして欧州に伝わり、再び注目されるようになったのである。こちらもクリックして見てねー!→【人気ブログランキング】

【カクテル・ヒストリア第6回】 ブラディ・メアリー<前編>:その名は「女王」ではなかった? 「ブラディ・メアリー」は現代のバーでも、かなり知名度のあるウオッカとトマトジュースの人気カクテル。この「血みどろのメアリー」について、意外な「裏話」を2回に分けて紹介したい。 「ブラディ・メアリー」については、多くのカクテルブックで「パリのハリーズ・ニューヨーク・バー(写真左)のバーテンダーだったフェルナンド・プティオ(Fernand Petiot)氏が1920~21年頃に考案した」と紹介されており、本人も後年、概ねそう証言している。 また、「ブラディ(血にまみれた、無慈悲な)・メアリー」という恐ろしそうな名前の由来については、16世紀半ば、宗教弾圧で多数のプロテスタント教徒を処刑した英女王メアリー1世に由来するというのが定説となってきた(珍説としては、ベースであるウオッカの創業者「ウラジミール・スミルノフ」の名前が欧米人には発音しにくく、「ウラジミール」が転じて「ブラディ・メアリー」になったという話も → 出典:Wikipedia英語版)。 しかし、1999年に出版された「Vintage Cocktails」や、2002年に米国の著名なカクテル研究家デイル・デグロフが著した「The Craft of the Cocktail」などは少し違う説を紹介している。 曰く、「当初は『Bucket of Blood』(「バケツ一杯の血」の意)という名だった。しかし、その後常連客だったメアリーという女性の名にちなんで、『ブラディ・メアリー』に変わった」。 「その客は相手の男性にいつも待ちぼうけを食わされ、寂しそうにプティオのつくるトマト・カクテルを飲んでいた。その様子がまるで、長期間幽閉されていた女王メアリーの孤独に相通じるものがあった」という。 えっ? 残酷な女王の「無慈悲」というイメージ由来ではなかったの? そして極めつけが、2012年に出版されたハリーズ・ニューヨーク・バーの「100周年記念本(原題:HARRY’S BAR THE ORIGINAL)」。1967年発行の雑誌「News Week」の記事を引用する形で、プティオ氏の驚くべき証言を紹介している。プティオ氏は1934年に米国へ渡り、シカゴの有名ホテルのバーテンダーとなっていた(67年当時は66歳)。 プティオ氏は言う。「(カクテル名は)ハリーズ・バーにいた若いスタッフが提案してきたんだ。(禁酒法時代、シカゴにあったナイトクラブ)『Bucket of Blood Club』を思い起こさせるって。そして当時、彼にはメアリーという名前の恋人がいたんだ」。本当なのかと思いたくなる証言。今まで信じていた「メアリー1世」説は何だったのか…。こちらもクリックして見てねー!→【人気ブログランキング】

【カクテル・ヒストリア第5回】 「禁酒法」下でも発展したカクテル 米国の「禁酒法」(the Prohibition law 正式名称は憲法修正第18条)は1920年に施行され、33年に廃止されるまで、約13年間も続いた。 同法は、飲用目的での0.5%以上のアルコール分を含む酒の製造・販売、運搬・配達、輸出入、所有を禁止対象としたが、家庭内で個人が飲むためのアルコールの消費(飲酒)や、医師が医薬品として処方する酒までは禁じなかった(写真左=禁酒法時代、摘発された密造ウイスキーを廃棄させる取締官)。 薬局で「治療薬」として販売されるバーボンには、「Medical Purpose Only(医療用限定)」というシールが貼られた。しかし、いくら法律で禁止しても飲酒への欲求を抑え込むことは不可能だった。 経済的に余裕のある富裕層の多くは、施行前に酒を大量に買い占めて自宅に保管した。バーボンを手に入れる処方箋のために、医師にワイロが渡された。高級なレストラン・クラブ、バーでは、違法と知りつつも、大量のボトルをストックした。 一方、都市部では「Speak Easy」と呼ばれる非合法の“もぐり酒場”が数多く誕生した。このため、禁酒法時代は取締り当局の目をごまかすために、別の意味でカクテル文化が発展した(写真右=禁酒法時代に薬局で「薬」として販売されていたバーボン・ウイスキー)。 お酒にフルーツ・ジュースやシロップ、リキュールを混ぜて、アルコールでるあることをごまかす工夫がはやったのもこの時期だった。禁酒法時代の米国で生まれたとして、現代にも伝わっている代表的なカクテルには、例えば以下のようなものがある。 アヴィエ―ション(Aviation)、バカルディ・カクテル(Bacardi Cocktail)、ブラッディー・サム(Bloody Sam)、ブロンクス(Bronx)、シカゴ(Chicago)、クローバー・クラブ(Clover Club)、フロリダ(Florida)、ロング・アイランド・アイスティー(Long Island Iced Tea)、オレンジ・ブロッサム(Orange Blossom)。 富裕層から一般庶民まで、「禁酒法」という足枷(かせ)をかけられながらも、アルコールを愛する国民はしたたかに抵抗を続け、酒という「神から与えられた贈り物」を守り抜いたのだ。バーで、もしこうしたカクテルを飲む機会があれば、ぜひ、約100年前の“もぐり酒場”に想い馳せながら、じっくり味わってみてほしい。

【カクテル・ヒストリア第4回】 信じる「逸話」は真実か 有名なクラシック・カクテルにはそれぞれ、「誕生にまつわる逸話」が伝わっている。しかし残念ながら、後世の「作り話」がさも真実であるかのように一人歩きするケースも目立つ(写真左=世界初の体系的カクテルブックと言われるJerry Thomas著「Bartender's Guide」=1862年刊)。 有名なところでは「マルガリータ」の逸話。「考案した米国のバーテンダーが、流れ弾で亡くなった恋人の名前を付けた」という話が今なお、日本で出版されるカクテルブックなど定説のように取り上げられており、本当の話と信じてお客様に披露してしまうプロのバーテンダーも少なくない(欧米では、この説はほとんど無視されていると言うのに…)。 カクテルの女王と言われる「マンハッタン」(写真右)も、英国の元首相チャーチルの母で米国人のジェニー・ジェロームが結婚前、「(マンハッタンで開かれた)選挙運動中のパーティーのために考案した」と紹介されることが多いが、後年、チャーチル自身が反証を示しながらこの説を否定している。 「サイドカー」も「パリのハリーズ・ニューヨークバーのオーナー、ハリー・マッケルホーン(Harry MacElhone)が常連客のために考案した」との説明をしばしば見かける。 ハリーズ・バーがサイドカーの普及に貢献したことに異論を挟む人はいないが、マッケルホーンが自身のカクテルブックで、「(友人でもある)パット・マクギャリーのレシピである」と紹介していることからも、マッケルホーン考案説は間違いであることは明らかだろう。 近年では、「スプモーニ」や「レッドアイ」という人気カクテルも実は、イタリアや米国ではなく、日本で誕生し国外へ伝わったことがほぼ確実になっている(この稿で紹介した5つのカクテルも含め、詳しくは、筆者のブログでの連載「改訂新版:カクテル――その誕生にまつわる逸話」をお読み頂ければ幸いである。 ◆URLは → http://plaza.rakuten.co.jp/pianobarez/ )。

【カクテル・ヒストリア第3回】 「初めは違った」そのレシピ 現代のバーの人気カクテルの約8割は、1890~1930年代に誕生したクラシック・カクテルである。しかし、誕生当時のレシピがそのまま定着しているケースは極めて稀だ。なのに、現代の標準的なレシピが「昔のまま」と信じ込んでいるバーテンダーも少なくない。 例えば、マティーニは、ジンとドライ・ベルモットでつくる辛口カクテルの代表格。しかし1930年以前のカクテルブックを見ていると、マティーニと言えば通常、ジンとスイート・ベルモットだった。ジン+ドライ・ベルモットのマティーニが主流になるのは、1930年代後半~40年代以降である(写真左=初の実用的カクテルブックと言われたハリー・マッケルホーン著「ABC of Mixing Cocktails」=1919年刊)。 また、現代ではジンと生のライム・ジュースを使い、辛口カクテルの代表格でもあるギムレットだが、英国で誕生した1890年頃は、「甘口系のプリマス・ジン+ローズ社製のライム・コーディアル(甘口のライム・ジュース)」という材料でつくるのが一般的だった(写真右)。 時代が進み、バーで生ライムが手に入り易くなると、ギムレットはベースのジンも含め徐々に辛口志向になり、甘口の“元祖”ギムレットはいつしか忘れ去られていった。 女性に人気があるアレクザンダーは「ブランデー+クレーム・デ・カカオ+生クリーム」というレシピだが、意外なことに、1930年以前は基本ジン・ベースで、ブランデー・ベースが主流になるのはそれ以降である。また、ソルティ・ドッグも現代では通常ウオッカ・ベースだが、1940年代後半の誕生当初から70年代前半まではジン・ベースが主流だった。ウオッカ・ベースが登場するのは70年代に入ってからである。 「最初はそんなレシピじゃなかった」という有名カクテルはまだ他にもある。「過去」を知る・学ぶことは、時には思わぬ発見、そして「次のヒント」にもつながるから面白い。

【カクテル・ヒストリア第2回】 「冷たくない」のが普通だった バーに冷凍庫や製氷機が当たり前のようにある今日、私たちは当然のように冷たいカクテルが楽しめる。しかし氷が貴重品であった時代、カクテルはさほど冷たい飲物ではなかった。 ドイツのリンデ博士(写真左)が初めて本格的な業務用製氷機を考案・発売したのは1879年。欧米の飲食業の現場で製氷機が普及し始めたのは1900~1910年代以降である。バーなど飲食の現場ではそれまで、冬場に凍結する川や湖から切り出した氷を使っていた。 木箱での輸送中、保冷に威力を発揮したのは、意外かもしれないが、木材を削った際に発生する「おがくず」だった。その保冷力はとても優れていて、開国直後、日本の外国人居留地で使われていたのは、当初は遠く米国東海岸・マサチューセッツ州の湖から船で運ばれた氷だったという。 もちろん当時の氷は高価だったため、カクテルのため好きなだけ使うなどはとてもできない。従ってマティーニやマンハッタン、ロブロイ、ギムレットなど草創期のカクテルは、さほど冷たくない状態で提供されるのが当たり前だった。 1920年以前のカクテルに生卵(卵白や卵黄)やハチミツを使うレシピが目立つのはなぜなのか、私自身、昔は不思議に思っていた。しかし後に、キリっと冷えたカクテルが簡単には叶わなかった時代に、少しでも飲みやすい味わいを創ろうというバーテンダーならでは工夫だったと知って納得した(写真右=リンデの考案した人工製氷機)。 日本国内では、1873年(明治6年)以降、函館などに出来た天然氷の製氷場からより安価な氷が供給されるようになったが、貴重品には違いなかった。日本に初めて英国製製氷機が輸入されたのは1883年。バーの現場に業務用製氷機が普及し始めたのは1920年代である。 現代では、「ぬるいカクテルなんてあり得ない」と思いがちだが、20世紀初頭の人々がもし現代にタイム・スリップしたら、「なんでこんなに冷たすぎるカクテルを飲んでいるんだ!」と驚くに違いない。※この稿の執筆にあたっては、石倉一雄氏の一文「慶応三年のパリ万博:氷はいかにしてカクテルに投じられたか」(2014年、社会評論社刊「東京府のマボロシ」内に所載)から貴重な情報を頂きました。

【お知らせ】Bar UKマスターは、バー業界向けの雑誌「リカル(LIQUL)」に「カクテル・ヒストリア(Cocktail Historia)」という連載をしています。カクテルに秘められた、あまり知られていない裏話、秘話を紹介するコラムです。出版元(編集部)のご了解を頂きましたので、今後、掲載後に一定期間が経った後、Bar UKのホームページでも紹介させて頂きます(なお、転載にあたっては若干の加筆・修正を加えておりますが、ご了承ください)。【カクテル・ヒストリア第1回】 著者印税ゼロだった名著 クラシック・カクテルの歴史について調べ続けて四半世紀以上になる。「カクテルについての連載を」と紙幅を与えられたが、短い連載で書けることは限られる。あれこれ考えた末、まずは、あるバーテンダーのことを取り上げたい。* * * 1876年8月29日、英国で一人の男児が誕生する。父は仕立て職人、母は織物職人だった。14歳で働き始めた彼は、新大陸への移民ブームに刺激され、1897年、21歳で大西洋を渡った。 そして、ニューヨークやシカゴの有名ホテルでバーテンダーとして頭角を現したが、そんな彼を見舞った悲劇が禁酒法(1920~33)だった。「米国に居場所はない」と考えた彼は1920年、44歳にして再び英国へ戻り、ロンドンのサヴォイ・ホテルのバーで仕事の場を見つけた。 彼はその後チーフ・バーテンダーにまで上り詰め、10年後、歴史に残る名著を世に送り出す。『サヴォイ・カクテルブック(The Savoy Cocktail Book)』。彼の名はハリー・クラドック(Harry Craddock)。本は、現在でも世界中の数多くのバーテンダーの間で、「バーテンダーのバイブル」と称され、ロングセラーを続けているが、彼が本の印税を一切受け取らなかったことは、ほとんど知られていない。 サヴォイ・ホテルを63歳で退職後、クラドックはさらに2つのホテルでバーを立ち上げ、チーフ・バーテンダーとして80歳近くまで現役を貫いた。1963年、87歳で死去。その訃報は新聞でも報じられた。だが、それから半世紀余。クラドックはサヴォイのHPでも歴代チーフバーテンダーの一人として名をとどめる程度で、その埋葬場所も不明だった。 しかし2013年、驚くべきニュースが届けられた。カクテル史の研究者・歴史家らの尽力によって「クラドックの墓が確認された」のだ。そして、サヴォイ・ホテルの関係者らが墓前に集まり、「没後50年記念の集い」を開催した。ホワイトレディなど数々のカクテルを考案したクラドック。その彼のカクテル文化への貢献が、ようやく公式に認められた瞬間でもあった。 技巧を凝らした派手なカクテルが日々誕生している現代。しかしクラドックのような先人の努力と貢献、言い換えれば「過去の積み重ね」があって、今のカクテル文化の繁栄がある。私たちバー業界に生きる人間は、そのことを常に忘れずいたいと思う。
