The history of the Green Mill Restaurants begins with the oldest licensed pub in St. Paul, Minn., the Green Mill Inn. Started by Myron Roth, the Green Mill Inn began as a soda fountain in the early 1930s, and it has continued as a neighborhood pub since that time. In 1975, Chris Bangs, Larry Cardoni and David Bicanich purchased the Green Mill. Within a year, using Cardoni's family recipes and some impromptu food science performed by dissecting the deep-dish carryout pizzas of 30 Chicago pizzerias, the group introduced its Chicago-style deep-dish pizza. Green Mills Restaurants has garnered more than 30 awards from food critics of publications, such as the St. Paul Pioneer Press, Minneapolis Star Tribune, Twin Cities Reader and Minneapolis St. Paul Magazine.

Located in a formidable brick building, the Lex (as locals call it) has been serving high-class food in an even fancier dining room since the 1930s. Dinners such as the walleye almondine and prime rib are perfect for special occasions. There is a steady stream of regulars who have been coming here for a very reliably good lunch that is actually quite reasonable. Dinners are more expensive, though also quite expansive with several sides that are meals in and of themselves. Dishes are prepared to be suitable for all tastes and special requests are gladly accommodated by the very friendly and patient waitstaff. Often overlooked is their very mahogany bar with one of the best wells in town.
