There's a reason why bourbon doesn't typically venture far beyond the 20-year mark. That's why when a distillery announces it's releasing an "old-man bourbon," we're apt to get excited.

Last year, Knob Creek debuted its 21 Year Old expression to much acclaim. It's the oldest bourbon ever released under James B. Beam Distilling Co. and a rare two-decade expression for the American spirit in general.

Now, after wavering availability in recent months, the Kentucky brand just announced it will be bringing it back.

Coming of age

Corn-based whiskey doesn't take to ultra-aging terribly well. Unlike Scotch (which is malted barley-based), bourbon matures in new, charred oak barrels, typically in a climate with considerable seasonal temperature swings.

Kentucky's wild fluctuation in temperature has made it ideal as the bourbon capital, but that accelerated interaction between whiskey and wood can also negatively impact flavor if left inside for too long. After several decades, the whiskey can become overwhelmingly woody, bitter, tannic and astringent. The pool of acceptable, drinkable barrels becomes smaller and smaller the older they get.

Well, apparently Beam's Knob Creek found a batch that was worthy of bottling.

21 and over

Knob Creek 21 is noteworthy because the distillery managed to preserve much of its signature, full-bodied profile despite the extreme age. A couple of weeks ago, it even earned Gold at the 2026 International Spirits Challenge.

The label's previous range-topper was the 18 Year expression that debuted for the brand's 30th anniversary in 2022. At that age, it only heightened all the hallmark Beam notes like toasted nuts and caramel. However, with an additional three years, the brand has produced a more complex, oak-forward bourbon. (Note: It hasn't been confirmed whether or not the 21 Year comes from the same batch as the 18 Year.)

The original barrels were filled around 2004, under seventh-generation master distiller Fred Noe. His son, Freddie Noe, subsequently helped select the mature whiskey for bottling this release. According to Noe, in an interview with Food & Wine last year, the barrels were reportedly aged in cooler, lower portions of the rackhouses to encourage slower maturation.

Bourbon regulations only require the listed age statement to represent the youngest liquid in the batch. So this expression may very well include whiskey that's older than 21 years, too.

As far as taste, Knob Creek states that the nose opens up with "seasoned oak, caramelized sugar and subtle smoke" before you experience a palate of "deep caramel, barrel char, toasted oak and hints of fruit." The long finish features toffee and more charred wood. It's bottled at 100 proof.

Price and availability

For this second run, Knob Creek 21 Year Old Bourbon is already available at retailers like Total Wine. Suggested retail pricing remains the same at $250 per bottle.
